Well, that was an interesting day.
It’s so weird to try to go on with life as normal or to witness everyone else doing the same routine. I keep thinking my Sister was hit by a car just two days a go and it is as if nothing has changed. The world keeps revolving, people keep doing their jobs and we learn that our lives are not the center of the universe… such a wake up call.
My morning was full of meetings, playing catch up, and telling the same story about 5 times to 10 different people. Now, I know how my Sister felt yesterday when visitor after visitor would arrive and phone call after phone call asked for her. I think I heard her tell the same story so many times that I could cite her word for word on it. I hope she got some more rest today with not as many phone calls and story telling.
For lunch today I was thankful to be able to go home and make myself a giant veggie sandwich with all my favorites.
The star of the sandwich was the Pumpernickel Bread I picked up at Sunrise Bakery yesterday. It was so sweet and delish. Just a lovely change from plain ole wheat. Inside the miracle bread I had Swiss Cheese, Spinach, Cucumbers, Roasted Red Peppers, Banana Peppers, and Buffalo Hot Sauce.
With the Sammy I cut up two Whole Carrots, a Pickle, and Jalapeno Hummus for dipping.
Such a yummy, beautiful lunch.
Too bad it was lacking protein and refused to keep me full. Around 3:00 my stomach was eating it self from the inside out so I popped a 100 calorie bag of Kettle Popcorn to calm it down.
For dinner I went with simple and delish.
It has been ages since I bought chicken breasts. I tend to stock up on chicken when it goes on sale, which led to an overflowing freezer of chicken breast that I was slowly widdling down over the last few months.
This week chicken breast was under $2.00 a pound and I decided it was time to restock again. I bought 6 breasts, froze 5 and decided to grill one for dinner tonight.
The George Foreman did the trick for a quick and easy grill. Once it was cooked I covered the chicken in Country Bob’s All Purpose sauce.
On the side I had some roasted Squash that I dipped in more of the Country Bob’s All Purpose sauce and some steamed Broccoli and Cauliflower.
I think I managed to cover all the food groups with this one? The meal could have been complete with a roll or something though
For dessert I dug in the freezer and recovered a Kit Kat Blondie I had been saving.
I warmed up the blondie in the microwave then topped it with a dollop of Fat Free Cool Whip. Yum!
Last week when Caitlin started her 30 Day Shred Challenge I decided to jump on the bandwagon and join in the fun. Unfortunately both of us had no luck finding the DVD in Orlando so I ordered it on Amazon and was very excited to discover it in my mailbox today.
After dinner I decided to start Day 1 of my challenge and completed the Level 1 work out.
Talk about intense! I’m not used to anything that uses weights and is so fast paced. I was breaking a sweat and breathing hard at the end.
I plan to take Caitlin’s approach with this and do 10 days of Level 1, 10 Days of Level 2 and the final 10 days with level 3. Wish me luck!
