I had a craving tonight for good ole fashion BBQ.
Growing up in the south barbeque food will always have a place close to my heart. However, barbeque usually means fatty smoked meats covered in a thick rich sauce with a side of fried goodies and buttered veggies. God for the tastebuds, bad for the waist and heart.
Luckily, I have learned to still enjoy my southern roots… just in a much scaled back ‘healthified’ version. 🙂
Tonight it was all about the BBQ Tofu.
I used the last droplets of my Annie’s BBQ Sauce which I mixed with some Texas Pete’s Buffalo Sauce then marinated the tofu in. I baked the tofu at 415 for 30 minutes, turning half way through. AMAZING!
To make up for the traditional full fat mashed potatoes I made Mashed Sweet Potatoes with a small spoonful of margarine and some non-fat plain yogurt.
They came out wonderfully rich and creamy. I also roasted up some Asparagus in the over for about 5 minutes too long. It’s amazing how much they shrink up when they cook too long.
All that was missing was a big ole hunk of Cornbread!
For dessert I had about 1/4 cup of Vanilla Chobani, a spoonful of Pecan Praline Granola and a small handful of TJ’s Mini PB Cups.
It was almost like a mini PB Sundae 🙂
This afternoon my cubicle neighbor gave me one of her 100 calorie bag of Girl Scout Cookies to sample.
They were ok… I’m just not the biggest fan of 100 calorie packs of anything. I would much rather have two tag alongs for 150 calories then this mini bag of air…lol
I am still debating whether I will be running or not in the morning. My quads are still really tight and in order to prevent injury I think I need another morning of rest. I am also considering cross training of some sort. My bike, Blue, sure looks lonely hung up in the closet. 😉
