Mmmming and Num Nummmming

When I came to work this morning I had no clue what I was going to have for lunch. Then as the day went on and my hunger started to climb, I began daydreaming about what was in my fridge and how I could incorporate it all in to a wonderful, edible creation.

As always my creativity got a little out of control and in the end I pretty much threw everything I had in a bowl, but boy, oh boy, it was good!


I started out by steaming up some Kale with a Small Chopped Apple, I then topped the bowl of greens with some baked Butternut Squash, Asparagus and Black Beans.


The flavors complimented each other perfectly! I was mmmmming and num numming the entire bowl. I’m actually sad the meal is over, I would happily eat it all over again.

After the bowl of greatness I had a piece of Godiva.


This one was filled with Raspberry and honestly not my favorite. I’m not the biggest fan of fruit filled chocolate, especially raspberry.

This morning I reached outside the realm of bars and had Unsweetened Apple Sauce and Teddy Grahams as a mid-morning snack.


Wow, I can’t believe its 3:00 already! The work day is almost over… woo hoo!!

what a bowl of deliciousness! there was cake at my office again today and i ate too much, so looking at your lunch is making me super jealous!! i want the healthy feeling back, haha.

Hey Melanie! Yes, I am luck enough to live about 5 minutes from my office so I have just enough time to run home, let my puppy out and make a great lunch. I get very spoiled doing this every day. 🙂

That lunch bowl looks great – I love heated up fruit. It adds so much flavor and sweetness to a savory dish!

I completely agree with you on raspberry filling in chocolate. The only exceptions I can think of are the Kashi bar or the TJ trail mix, but I think it’s because they aren’t the real, fancy chocolates. When it comes to something like Godiva, I am not a fan, either.

Lucky you had such nummer ingredients on hand to throw into a good lunch! I need to work on keeping more fresh produce around for just that. I always love your creativity!

I love the random lunch. I have kale in the fridge and have been wondering what to do with it – so this is a nice suggestion.

Yeah Teddy Grahams! So old school, so good. I love the chocolate ones, but I never think to buy them! Good call.

The fruit filled chocolates always make me angry when I pull them out of the box. Give me anything else – nuts, vanilla, coconut, caramel, chocolate, I’m happy. Fruit filled? Ick.
