Party Platter Lunch

At yesterday’s corporate meeting my main focus was the cake. I knew I wanted cake and the idea of filling up on veggies was the furthest thing on my mind. However, after I had the cake and noticed the still full trays of vegetables, cheese and crackers around the room, I knew there was no way I could turn down all of the free food. So instead of ruining my dinner last night, I loaded up a plate of left overs to enjoy with my lunch today.


I like to call this lunch a Party Platter meal. I took all of the wonderful left over party food and created a very filling and satisfying lunch.

On my plate I had Kiwi, Crackers, an assortment of Cheeses….


….Broccoli, Tomatoes, Zucchini, Jalapeno Hummus…..


…..Grapes, Apples and Cashew Butter.


I think I named it all. 🙂

It was a fun lunch that took a while to eat because of all the little bites and chewing. It was also good to know the food did not go to waste.

I also managed to squeeze in a piece of Godiva for dessert.


And had a serving of Pumpkin Spice Trail Mix for a mid morning snack.

I love the idea of a lunch platter, in the summer I do this all the time with the leftovers from events at the golf club. The kitchen staff jokes that I always work after functions so I can go visit them and eat the leftovers from the lunch buffet!
