Last Day on the Slopes

I am so sad my vacation has come to an end. Until next year when I hid the slopes again I bid you adieu Breckenridge.


The goal of today was to eat up what ever left overs we have in the condo so my breakfast was much of the same. I made my Aunt and I an omlette of Egg & left over Chicken from Mexican Fiesta Night with Salsa on top.


I also had a bowl of chopped fresh Pear and Strawberries on the side mixed with Non-Fat Vanilla Yogurt.


It was a wonderful filling breakfast.


I spent the morning skiing with my Aunt at her slower pace while my Mom, Dad and Twin Bro took off on their own. We stopped at the top of Peak 8 around 10:30 and I enjoyed a hot cup of tea and 1/4 of a Peanut Butter Cookie.


Lunch again was a ploy at using up what ever was left in the fridge.


I had the other half of the Acorn Squash as a bowl again, except this time I had Amy’s Tuscan Bean and Rice Soup as the filling.


The Acorn Squash made another tasty addition to the soup.

I had some left over White Asparagus on the side.


Many of you was asking how the White Asparagus tasted and I have to say it tasted pretty much the same as the regular asparagus, maybe just not of strong as a flavor though.

Then for dessert I finished off the last three of Heather’s Ricotta Chocolate Chip Cookies.


I decided to just spend half a day skiing today. Being as it was my sixth day on the slopes, I decided to relax a little before I headed back to the real world. I bundled up and headed out to the patio right by the chair lifts.

I enjoyed a Fat Tire while re-reading Twilight next to the fire pit.


It was so refreshing to be outside and just reading. I loved it and appreciated the ‘me’ time.

After my Mom and Aunt were done skiing they came out joined me.


We headed to the bar inside to take advantage of the Fat Tire Friday Specials.


We enjoyed our beers while watching the skiers come in.

All the beer made me a little hungry so I snacked on a Kashi Pumpkin Pie Bar.


It also made me sleepy so I had a relaxing afternoon nap. ๐Ÿ™‚ And then a couple of handfuls of Peanut Butter Puffins. Yum!


Our mission to clean the fridge out was so successful at lunch we had nothing to eat for dinner, so we went to one of our favorite little hole in the walls for a farewell Birthday dinner.


We discovered Rasta Pasta a few years ago when my Sister’s snowboard instructor treated her for lunch their one day. We now make it a point to get a bite to eat from the little restaurant every year.


I ordered the Rasta Pasta, but asked for Tofu instead of the chicken.


The pasta also came with a little salad that had a Marinara/ Ginger Dressing on top. It was a really tasty combo.


It is a large portion and I probably ate about half of the pasta and picked out the rest of the Tofu.


I did manage to nibble on a second piece of garlic bread. You only live once, right?



And since it is my birthday I made the family stop and pick up some treats on the way home. I had half of a Chocolate Chip Cookie Sandwich with Peanut Butter Filling. HEAVEN!


It was so rich and delish!

Today may not have been my best or healthiest day of eats, but it was my last day of vacation and I decided to treat myself. Sometimes we all need a little treat every once in a while. ๐Ÿ™‚

Now its time to pack and load up the rental. We have an 8:30am flight tomorrow morning to catch which means we need to be on the road by 4:00am! Its going to be another early start, but it will be nice to be back to Florida at a decent hour. Good night!

I’m sad your vacation is coming to an end too! I’ve thoroughly enjoyed the pictures. At least your homecoming means more fun posts of your and Caitlin’s adventures! Yippee!

Hi Roomie! Just wanted to comment on the white asparagus! In germany(where i grew up) and is extremely popular) its called spargel! Its grown covered in soil…its white because it never sees the sunlight…Its cooked with like normal green asparagus and usually topped with a hollandaise sauce…they even have festivals to celebrate spargel during the spring and summer!

happy birthday!!! what an amazing skiing trip, i’ve really enjoyed seeing all the gorgeous colorado pictures the past few days!! what a great state ๐Ÿ™‚ i’m going skiing tomorrow here in the czech republic but it’s supposed to be cloudy, as usual, boo! send me some sunshine ๐Ÿ™‚

Wow, Fat Tire and Twilight looks just about perfect!! I think I ate at that same restaurant when I was in Breck a few years ago!! SUCH good food!

Seriously, I agree that you only live once and days of splurging a bit are totally necessary for happiness– plus it seems like you’ve deserved it burning a million calories everyday hehe.

oh man my guy friends are OBSESSED with rasta pasta. I can’t count the number of times we made it in high school!
