Not A Cloud in the Sky

I know you’re probably tired of hearing me say this, but it was another BEAUTIFUL day in Colorado!


I’m sorry, It’s just hard to take a bad picture here.

Before we headed out this morning, I enjoyed one of my pre-portioned cereals for breakfast.


This mix held 1/2 cup of Kashi Mighty Bites, 1/2 cup Kashi Go Lean Crunch, 1/2 cup Kashi H2H, 1/2 cup Peanut Butter Puffins, 2 Spoonfuls of Non-Fat Vanilla Yogurt, Strawberries, Blueberries, & Blackberries. It was a perfect breakfast… I was honestly missing my morning cereal mixes.

After breakfast, we loaded up the rented mini van and headed out for a day of skiing where I like to think of as heaven on earth.. Vail!


Vail is one of my all time favorite mountains to ski on. I love the set up of this place, its just so open and spread out. We were there for a whole day and barely covered half the mountain!


Mid morning I split a White Chocolate Macadamia Nut Clif Bar with my Mom in line for a chair lift.


Thank you Kaneil again for the wonderful bar, my Mom and I enjoyed it immensely. πŸ™‚

We stopped for lunch at the Wildwood Smokehouse, which smelled so good with a BBQ Pit smoking out front.


I ordered a bowl of the Vegetable Chili with some Cornbread and a couple of Waffle Fries from the community plate the table shared.


I also snagged one of the Ribs my Dad ordered. Sooo good.


I was uncomfortably stuffed from lunch and the only cure to a feeling like that is to hit the mountain hard.


It was actually pretty warm today and I kept shedding layer after layer. At one point I was contemplating that skiing in just a sports bra did not sound like that bad of an idea.


I love the views from the bowls on Vail, everywhere you look is breathtaking.

On the way back to the van I made a small detour and stopped at the Starbucks for a Grande Non-Fat Vanilla Roobios Tea Latte (my new guilty pleasure)


This time I ordered it with out any sweeteners at all and I really enjoyed it. It was not sweet at all, just the way I like my tea.

IΒ Β also snacked on a True Delights Bar on the ride home.


After a long day of skiing and and driving I believe a beer was calling my name.


I tried a local microbrew wheat beer called Easy Street. I enjoy all wheat beers and this one was particularly yummy, especially while sipping it in the hot tub.

Dinner was a Mexican Mountain Feast.


I had two hard shell tacos that contained Refried Beans, Chicken, Lettuce, Shredded Carrots and onions.


I also had some oven roasted White Asparagus on the side. I was really hungry and at this point was up for anything. It was great.

I enjoyed Three Whole Grain Fig Newtons for dessert.


I can’t believe that was my fourth day of skiing and I feel great. I guess those daily 4 miles runs have really done a number on my stamina. We have two more days left of skiing ahead and I am up and ready for it! Tomorrow we are heading to another one of my favorite mountains, Keystone, for some adventurous skiing. The forecast is claiming afternoon snow showers, so let’s cross our fingers!

Those tacos look delicious! I think on my ski trip in 2 weekends I am going to take some inspiration from you and bring some bars to snack on while on the go.

All your pics look terrific. It’s just so pretty!

Does white asparagus taste the same as the regular green kind? I’ve never tried the white before but I’m a big asparagus fan.

Ahhh I miss Vail so much!! We usually go there and Beaver Creek – it’s unreal how many trails there are there! Glad you got out on those back bowls – there is nothing like them! Isn’t it great when you can make it through a week of skiing, no problem? After a few days my whole family was complaining of soreness and exhaustion and I really couldn’t sympathize with them πŸ™‚

I am really enjoying all your vacation photos. It looks like a blast – kind of makes me want to go skiing. Enjoy the rest of your time on the slopes.
