I am beat! It’s been such a long day and I am so ready for sleep to prep for my 5k tomorrow.

We ended up walking around downtown Fernandina Beach after the Fort this morning. It was really, really windy near the water..brrrr…… so we stopped and got some Hot Chocolate to warm us up on our stroll.


For lunch we stopped at a little Mexican place called Pablos. It was recommended for their great meals and I believe no one had any complaints of the yummy meals.

I always have problems ordering healthy from Mexican Restaurants and debated back and forth on what I wanted. I did not want anything heavy in cheese or filled to the max with meat and beans. I finally decided to play it safe and ordered the Grilled Chicken Salad.


The salad came with Grilled Chicken, Grilled Mushrooms, Onions and Tomatoes. The chicken was very well seasoned and grilled mushrooms are always a great addition to any meal. I happily cleaned my plate with no dressing needed.

For dessert we were served Cream Filled Churros, compliments of the chef.


I had one and OMG these were good! Luckily there was only enough for everyone to get a single piece otherwise I more then likely would have dug in for more.

After lunch I said my good byes and rushed back to Orlando. Caitlin and I had a sleepover planned in preparation for our 5k tomorrow, but unfortunately she is feeling under the weather so we are postponing for now. I hope you feel better Caitlin!

In light of my new arrangements to have dinner solo I decided to just be lazy and throw some canned Lentil Soup in the microwave with Kashi Crackers on the side.


It was quick, easy and warming; exactly what I needed.

Dessert was some of my Peanut Butter Cup Frozen Yogurt, which I realized I had been neglecting! I topped the FroYo with the last of my TJ Candy Cane Joe – Joes.


A friend from college is in Orlando for the night and is stopping by for a quick chat in a few. Hopefully she won’t keep me up all night as I am exhausted and need my sleep to whip out a new PR in my race tomorrow. Wish me luck! ๐Ÿ™‚

Amelia Island Plantation

How would you like to wake up to this view every morning? After a longer then expected drive up here, I finally made it to Amelia Island right before dinner last night. I was famished and ready for anything. My small snack of a serving of Pumpkin Spice Trail Mix at the start of my more ยป
