One More Hour

Ok now I only have more hour of work left! Yay! So I better make this snappy so I can hit the road soon.

The bagel this morning did such a great job of keeping me full that I completely forgot about my mid morning snack until it was close to 11:30, at this point I decided just to have lunch.


Lunch consisted of some leftover Acorn Squash Lasagna.


Lasagna never looks pretty after its been frozen, defrosted and reheated, but I Promise it was still delicious. 

Since I finished off all my veggies yesterday, I dug into my frozen vegetable stash to add some green to my plate. I believe this was an Italian Vegetable blend I picked up at Publix.


I know this is my third day in a row have yogurt and pineapple with my lunch, but it was the last of my pineapple and the last of the Chobani that I wanted to finish before I left. No point in having good food go to waste.


Though this was a complete meal, for some reason it did not leave me satisfied. (I blame the no midmorning snack) So, I dug into the cabinet and ate a Graham Cracker to fill the void. (Sorry no picture) It worked and now I am happily fulfilled.

Alright the next time I will be blogging will be from the comfort of my parents home. Yay!

I wanted tell you that I am using your lasanga recipe for Thanksgiving. Since no one else is veggie, I want to prove veggie lasagna can me just as decadent and hearty as meat lasagna!

I Love defrosted lasagna/pasta/soup- though it may not look as pretty, it definitely tastes just as good once the flavors all meld!

Agreed lasagna heats well…but isn’t ever as pretty the second time. I made some great eggplant lasagna this summer, I may have to test out the squash
