Playing Catch Up

After a very busy day I decided to stay in tonight and just play catch up. I’ve been catching up on blogs, my DVR and laundry. It’s been wonderfully relaxing and just the break I needed.

I ended up not getting very hungry for dinner until around 8:00; even then it still was not at ‘OMG hunger’ so I decided to take my time and come up with fun creative dinner. At first I wanted to make a sweet potato and black bean burrito, but was out of sweet potatoes. After I stood in front of my fridge for 5 minutes thinking hard I decided to experiment with the last 1/3 of Butternut Squash Puree I had in the fridge. The results were amazing.


I ended up with a Black Bean, Butternut Squash & Corn Burrito.


I stuffed the burrito and topped it with Salsa and Fat Free Cheddar Cheese and baked it in the over at 400 degrees for 10 minutes. It was sooo good!! The pureed butternut squash reminded me of refried beans in the Taco Bell burrito. It was gooey, chewy and delicious!

On the side I had some accidentally overcooked, oven roasted asparagus.


Though they ere overcooked, the asparagus were still excellent!

I experimented for dessert tonight. A couple of days ago I placed my Vanilla Chobani in the freezer in hopes of replicating my favorite sweet treat.


Unfortunately it did not pan out as I had expected. It was like an icey creamsicle, not exactly the creamy frozen creation I was expecting. I gave up a couple of bites and moved on to another dessert….


I dug into four Candy Cane Trader Joe Cookies. They were a much better alternative to the frozen Chobani. πŸ™‚

I am meeting up with the Orlando Runners Club tomorrow for a very early 10 miler. I’m going to hit the hay extra early tonight. Sweet Dreams!

Dinner looks yummy. I’m with Amy- I’m going to stop by Trader Joe’s tomorrow and get some of those Candy Cane cookies! I’ve been craving them after seeing them on yours & Caitlin’s blogs πŸ˜‰

Bobby and I were actually just wondering how frozen Chobani would taste – I’m glad you posted about it! We’ll keep ours in the fridge πŸ™‚

Everything looks sooooo good! The burrito was a great idea, I’ll have to try that!

Love seeing your experiments! I think it might be something to do with the gelatin/fake-y ingredients, but Yoplait yogurt usually freezes pretty well. I’ve frozen it before and then nuked it for 15 seconds right out of the freezer and it tastes… well, not quite like fro-yo, but not too bad.

Too bad my country doesn’t have a trader joe but I am currently addicted to chocolate mint cream cookies bought from girl guide’s group. I think it’s probably called girl scout cookies in the US. Been eating one every night as a substitute to your candy canes. πŸ˜›

What a yummy burrito!! Good thing I didn’t find those oreos at TJ’s. I’d be in trouble…they look sooo good!
