Rather Be Outside

I just got back from my lunch break and let me tell you, it is BEAUTIFUL outside! Its 80 degrees, the sun is shining and there is a slight breeze! It made me so sad that I am stuck in the office for the rest of the afternoon, I would much rather be out by the pool! I hope the weekend has the same great weather.


Lunch today was something quick I had actually picked up Sunday at Publix. I have been eyeing Publix’s sushi case for a while and I finally caved this weekend and picked some up for a quick lunch. It just looked so fresh and pretty, how could I not resist?


I had the Avocado, Crap & Shrimp Spring Rolls. Yum! They were just so light and refreshing.


I also had four Shrimp Dumplings, which I steamed in the microwave. The package actually came with nine so I put the rest in the freezer. I hope they hold up well in there.



This lunch was a little bit of a pricey addition to my weekly grocery trip, but it was good and totally worth it for this week.


Mid-morning I tried my first mini Coconut Pie Larabar


I’ll admit I was a little scared to try this because I am not the biggest fan of coconut, but was pleasantly surprised I really liked it. The coconut flavor is not strong at all and was the perfect equal balance of all the ingredients. I can see why this flavor is so popular. Sadly, it was the only mini coconut pie I managed to grab. Oh well.


I also had a Strawberry Fruit Leather right before my meeting, but was in a hurry so totally forgot to take a picture of it. It would have been a boring picture anyways.


Tonight I have one of my weekly Perfectly Portioned for One meals planned and I am very much looking forward to it. Maybe I can also get outside and enjoy some of this great weather before the sunsets…. Cross you fingers!

oh wow – your lunch looks amazing! i love those rolls. The deli by my old job had them and I would get them all the time! Now I really miss them!

lunch looks good though! have you ever tried to make them from scratch? they’re really good and easy, the only crappy part about the whole thing is cutting everything up. 🙂

Thanks Jessica! I actually grabbed the mini Larabars at a 15k I ran a couple of weeks a go. Apparently they can only be found as giveaways at events. So be on the look out!
