No Snack Needed

My breakfast was amazing and it kept me full all the way until lunch. I had a ten o’clock meeting this morning and was not hungry before the meeting. I decided to hold off on my midmorning snack until after the meeting, but when the hour long meeting was over I wasn’t starving so I decided to just wait until lunch time. It worked! I will have to remember this breakfast for mornings when I will need to go a little long between eating times.

Lunch today was just as amazingly delicious as my breakfast, even if it was just leftovers. J


I had the rest of my Butternut Squash Soup I made the other week.




This time instead of adding chicken I cut up the rest of my left over baked tofu and threw it into the soup. On top I tried a dollop of ricotta. The ricotta on top was ok, I just couldn’t taste it. I think I will stick to my yogurt as a soup topping from now on.


I also had my last treat I bought from the Whole Foods Bakery… a New York Style Corn Muffin.



I LOVE corn muffins! I saw this on the hot bar and it some how ended up in my cart. The muffin was good, but a tad too sweet for my taste. It was on the verge of being a cupcake. I still ate and enjoyed every bite though.

I might be in trouble this afternoon. I have an Event Planning Seminar thingy at 3:00 this afternoon and the just sent me their menu for appetizers and desserts.

Asian Beef Rolled Skewers with Ponzu Sauce; Organic Crudites with French Bread & Salted Butter; Mini Grilled Petit Filet with Crimini Glace de Veau; Lamb Chops in Pistachio Crust with Sauce Robert; Salmon Feuelette with Capers and Lemon Dill Sauce

Milk Chocolate Creme Brulee; Coupe Berries with Mango Sorbet; Chocolate Fountain with an array of dipping items

My goal is to only have a sample of some of the choices and count it as my snack. I am still pretty full from lunch so I am hoping this will do. I want to be able to make it home and enjoy an actual dinner, so let’s see what self control I will have around all of these eats! J

The corn muffin looks amazing. I LOVE corn muffins. I have to be careful when I make them otherwise I eat them all 🙂 Though I guess it’s like that with most baked goodies that I make, haha.

Lovely lunch—I love corn muffins too but haven’t had one in forever! The soup looks great, too.

I’m sure you’ll be able to enjoy your event tonight. You know how to keep it healthy yet still try indulgent items. Have fun, and take pics!

What’s the different between a NY style corn muffin and others? I only thought there was one kind.

i looove corn muffins too! amy’s has this cornbread and chili frozen dinner that i buy just because of the cornbread haha

Megan – I haven’t tried the Vitamuffins yet, I can’t seem to find them where I live, but I have been on the look out

Heather – I have no idea what the difference is! I just called it a New York Style muffin because thats what the sticker said 🙂

Oh. Maybe cause it was so big? haha.

I thought maybe it had to do with having whole corn in it v. not having whole corn in it.
