Messy Pita

I had a great lunch today even if it did kind of fall apart on me. :O



I made a Chicken Salad Pita which consisted of

  • ½ chicken breast
  • 2 tbsp NF Plain Yogurt
  • 1 tbsp Honey Mustard
  • ½ Chicken Breast
  • Minced Garlic
  • Onion
  • Okra (can you tell I have A LOT of okra and am trying to put it in every dish I make?)
  • Shredded Summer Squash
  • Tomato
  • Apple
  • 1 Pita


This was the last pita of my stash and I think it might have been on its last day. It refused to open for me and ultimately just fell apart when I tried stuffing it. I then just topped all of the yummy filling on top of it instead. It worked and was still good J



On the side I had the rest of the apple I had cut for the salad and a small handful of almonds.


This was a very filling lunch and my stomach and taste buds are thanking me profusely for the meal.

To hold me over til lunch, around 10:00 this morning I snacked on a mini Pecan Pie Larabar.



I definitely think all the Larabars with a nut in the title are my favorites. J

Well, that was a short and sweet entry! Time to get back to work!

i agree about larabars with a nut in the title!!
the pita looks WONDERFUL!

Even if it didn’t fit in the pita, it still looks yummy! I haven’t even thought about subbing greek yogurt for mayo, I think I am going to have to try it!

That chicken salad sounds soooo delicious!! I need to make some (and still have never had least can’t remember). The pumpkin brownies sound awesome too…I like my baked goods less sweet 🙂

love this chicken salad. i usually hate stuff like that but it sounds and looks awesome.

and i want mini larabars asap. our races never have any goodies like that!
