Lunch Reduxe

Since I forgot my camera at lunch yesterday and was unable to photograph my wonderful creation, I decided to use that as a great excuse to have my excellent lunch again. I had the perfect amount of leftovers in my fridge to recreate the infamous creation so now you guys can admire the beauty of my lunch. J


See, isn’t it pretty? It was tasty too! I had no problems eating this sandwich two days in a row.


The george foreman of course assisted me in this Panini and did most of the magic. I just sliced the other half of the left over avocado, tomato and mozzarella, then sandwiched that between two pieces of wonderful Whole Foods brand Whole Wheat bread and presto, the perfect Panini. I really enjoyed this flavor combination and the gooiness of the mozzarella was perfect with the mushiness of the avocado!


On the side I had a handful of grapes to round out my meal.


While I was working this morning I snacked on some carrots and almond butter.


I’ve seen the trend of peanut butter and carrots, but decided to give it a whirl with my fave nut butter ( I <3 Almond butter!)  I loved the combination!! I want to try more veggies dipped in almond butter now! It’s like a whole new world of dipping!


I have two more meetings, some e-mail responding and congrats writing to do and then it’s the weekend for me. I hope everyone else has a Happy TGIF!

I always use my George Foreman to make paninis!! So perfect and easy! Your ingredients sound wonderful 🙂

I have yet to try the peanut butter and carrots, I’m sure I’ll like the combo…wouldn’t have thought of ab though, good to know it’s yummy too!

I LOVE carrots & PB!! I’m not sure I’d like other veggies with pb though…

I have no idea what the crap happened to my George Foreman Grill. I swear I have one somewhere, but I can’t find it. I think that means I have to buy another one. Or at least a Cuisinart Griddler, because I’m going to NEED paninis to get me through the harsh Floridian winter =P
