Dessert for Breakfast

Happy Monday everyone! Aren’t you all just so excited to be at the start of another work week???… yeah, me either. I do have quite a few fun activities planned for this week so that keeps me excited; its just a bummer that they won’t be happening until the latter part of the week. Oh well.


Mondays always seem the hardest to get up for. After being able to sleep in til 7 over the weekend, getting up at 5:30 just does not feel right anymore. I just have to push right through because I always know as soon as I get my shoes on and head out the door I never have any regrets on getting up at that time.


This morning my plans were just do a short run and then come back for some desperately needed ab work. However; I was in such a groove with my run that I did not realize how far I’d actually gone and when I returned at my apartment I was very shocked to see I had been away for 51 minutes… oopppss. I guess I will save the ab work for tomorrow.

On my wonderful trip to Whole Foods on Saturday I was finally able to purchase a Blueberry Vanilla Crackle Granola Plank that has become so popular over the blog world lately. I am not a big yogurt eater so all during my run I was trying to think of a fun and creative way to eat the plank with out just going the boring route of plain old bar form as a snack. I always get the most creative with food during my runs, maybe its because that’s when I seem to be the most hungry so everything always sounds good?


What I came up with was dessert for breakfast. J



I chopped up a small red apple which I mixed with a couple of spoonfuls of applesauce and some cinnamon. I then nuked those ingredients for 45 seconds.  I crumbled ½ of the granola plank over the warm concoctiona dn just to push it over the top I added a generous spoonful of fat free coo whip to the top.



Now this is what I call a Monday breakfast! Nothing like starting you week off with a healthy sweet concoction to help balance life out. It was everything I hoped for while I was dreaming of it on my morning run. I still have another half of a plank left so I would expect you will be seeing this again before the week is over.

ooooooo yummy breakfast!!

my favorite morning meal is a big old bowl of oatmeal! and a COFFEE! or two. i think i may go get my second cup right now. 🙂

What a yummy way to start a Monday!

I have oatmeal pretty much every morning, so my breakfast doesn’t change much on Mondays!

Blah, is the weekend here yet?!?!?! 😉

No matter WHAT day of the week it is, I always start it with a bowl of banana/nut-butter oatmeal and a protein shake.

I don’t live downtown… I liveeee near Orange Park. We still consider everything in & around the area “Jacksonville”. I probably live about 5 minutes from your ex.

Anything involving coffee haha, that is definitely a requirement for weekday mornings. I love breakfast food so much really anything makes me happy…cereal, yogurt, toast…as long as theres so fruit mixed in.

Well thats one way to start your monday off right!… I am forever trying to plan my meals for the next day on mondays.. because i commute to school and stay over night i have to pack like a million different things!

My favorite Monday breakfast is oats, but today I had fruit, yogurt, and cheerios. Still good. Yours looks divine!

Great run stats! I love creating meals that seem like some type of dessert, but knowing how nutritious and healthy they are just makes me happy 🙂

I’d have to say my go-to Monday morning meal is definitely coffee with a side of peanut butter-banana oatmeal, always hits the spot, and gets the week off to a grand start!
