Cheesy Zucchini and Carrot Fritters

by Meghann on July 18, 2011

I had a little fun in the kitchen tonight.

A little of this.

A little of that.

And – what do you know? – I have a great dinner to serve. 🙂

Cheesy Zucchini and Carrot Fritters

  • 1 Zucchini
  • 1 Yellow Squash
  • 1 Carrot
  • 1 Egg
  • 1/2 cup Bread Crumbs
  • 1/2 cup Whole Wheat Flour
  • 1 T Chia Seeds
  • 2 T Ricotta Cheese
  • Italian Seasoning
  • Salt & Pepper

Start by shredding the Zucchini, Yellow Squash, and Carrot.

Once the veggies are shredded, add the rest of the ingredients to the bowl.

Mix everything together and form seven palm size fritters.

Fry them up on the stove top until golden brown.

I served mine with salsa and plain yogurt. Derek had his with buffalo sauce.

I love the addition of the ricotta cheese in these. It gave the fritters a bit of creaminess and richness that my fritters have lacked in the past. It also added a boost of protein and dairy. 🙂

On the side I had a few pretzels with mustard (aka I was too lazy to make anything else to go with the fritters).

This afternoon I snacked on a Corn Muffin VitaTop with a smear of Naturally Nutty Chocolate Butter Toffee Peanut Butter.

Did you know yesterday was National Ice Cream Day?! I missed out on it then, but I made up for it today with a small bowl of Chocolate Chip Ice Cream and Frozen Cherries.

Why have I never had this combination before? It’s delicious! Sort of like the cheap, easy – and fire alarm friendly – version of cherry jubilee. 🙂

This week (or really three weeks ago 😉 ) I tackle TRX Training for the first time. It’s a workout that pretty much guarantees buff arms and a strong back. Check it out for yourself!

My Guacamole Challenge Disaster

September 16, 2008

The Guacamole Challenge was interesting to say the least. My team and I wanted to be really creative and think outside the box so we decided on Chocolate Guacamole. I knew from my year of finding healthy, good for you recipes that chocolate and avocado could go together, so I googled it. After sifting more »

Kitchen Sink Gumbo

September 15, 2008

I’m really bad at turning every recipe I make into a ‘kitchen sink’ recipe. I just want to have as much veggies into my meal as possible so I usually just throw in what ever is in the fridge. I think this stems from the fact that when I’m at the store I pretty much buy more »

During the month of September Orlando does a Magical Dining experience. It’s this cool thing where you can go to all these fancy restaurants in Orlando, select a 3 course meal from a specified menu and only pay $29. I mentioned this idea to my Dad and he spread the word to a couple of more »

They're not blueberries, they're chocolate chips!

September 13, 2008

Tonight I had my aunt and cousins over for a housewarming dinner in my new apartment. When trying to decide what to make I was stumped for ideas. All the stuff I was dying to make were a little out there, but I decided to put my faith in their adventurous food side and make more »

My Introductory Meal

September 11, 2008

It’s amazing how fiddling with my new blog all day at work made my day go by so much faster. Granted, I got absolutely no work done, but it was nice to see 5 o’clock roll around out of nowhere. For dinner tonight I dug deep in my fridge to find some tofu I bought more »
