Wednesday

I received a text from Derek – the box has arrived! Unfortunately, my Mexican lunch was NOT agreeing with me and we decide to make pancakes for dinner instead. I actually really like that Blue Apron is only three meals, that way you don’t feel pressure to have it every single night. Some nights all you really want is pancakes.

Thursday

It’s summertime in Florida, which means crazy afternoon thunderstorms are the norm. Sure enough, just as I’m leaving the office at 6:00pm the dark clouds move in and a crazy downpour pounds on the roads and essentially cause a gridlock on the highway I take home. Not cool.

On my way home, I receive a call from my husband with a proposition: either he can start dinner now and I can do the crazy pile of dishes in our sink or he’ll start the dishes now and I can cook dinner when I get home. It’s a no brainer – I’ll take the dishes!

Hubby is already elbow deep in the prep work for the Hoisin-Glazed Chicken Meatballs when I walk in the door.

Derek enjoys Blue Apron because the recipes are essentially written for him. Basically the step-by-step instructions are fool proof and the pictures help him understand the next steps. For someone who hates stepping outside of his cooking box, he’s always quick to jump on board when a Blue Apron meal is involved.

The meatballs are delicious. It’s definitely a dish we normally wouldn’t have thought of to cook on our own, so it was a nice change in our weekly meal routine.

Friday

It’s Friday! Woo hoo! I got off work a tad on the early side and spend a glorious hour listening to Dragonfly in Amber (from the Outlander series) in the pool.

I left the pool feeling refreshed and hungry – time to start dinner.

For some reason, out of the three meals we received, the Huevos Rancheros made me the most nervous when I opened the box. I have no idea why, maybe it was the sheer simplicity of the dish? Turns out, it ended up being my favorite.

The recipe was simple, but also complex. There was a lot of flavor in the homemade salsa verde and I enjoyed cooking with tomatillos for the first time. Also, the mashed pinto beans in the mini quesadilla? Perfection.

Saturday

Like I said, not every night has to be Blue Apron night. Saturday was date night. We dined at our local Cinebistro while watching Jurassic World. By the way, Jurassic World was awesome. After watching a marathon of Jurassic Movies the week before, Jurassic World is my new favorite. I love how they embraced the new technology in the latest edition (it’s crazy how much has changed in 20 years!) and Chris Pratt is some serious eye candy. Yum.

Sunday

The plan: go all out with the Seared Steaks & Mashed Potatoes for Derek’s first Father’s Day dinner.

I was quite proud of myself with this one. Everything came out looking and smelling amazing. Is there anything better than sautéed radishes? I seriously need to make them more often.

Unfortunately (real life), Derek wasn’t feeling great and wasn’t able to eat any of it. He overheated earlier in the day, which really messed with his stomach. Luckily, he felt better the next day and I heard the leftovers made a great lunch on Monday.

So that was our week of Blue Apron. Nothing out of the ordinary, just how we incorporate the meals into our normal routine.
