Tonight I had a self imposed “Just Add OJ”* challenge… I wanted to cook a meal where Florida Orange Juice was a main ingredient.
Part of the Just Add OJ ambassador program is to highlight the versatility of using Florida orange juice as an ingredient (i.e., works for breakfast, lunch, dinner, snacks, deserts, etc.). On top of being a great mimosa mixer (mmm…. mimosas), Florida Orange Juice also works in baked good or as delicious sauces and marinades for all things sweet and savory. I grew up with my dad using OJ as his secret ingredient for his pork. He would always squeeze his own oranges fresh from our backyard to make the perfect marinade and let it sit overnight. My dad makes some good pork.
There are plenty of Florida Orange Juice inspired recipes at Floridajuice.com, including the following recipe for Whole Roasted Orange and Sage Chicken that immediately caught my attention when I was trying to figure out what to make for dinner tonight.
I didn’t have all the ingredients, so I decided to use the recipe as inspiration and just use what I had on hand. Instead of a whole chicken, I had split chicken breasts and, instead of doing a wet rub or sauce, I created a marinade with the orange juice.
Here was what I came up with for the marinade:
- 2 cups Florida Orange Juice
- 1.5 tablespoons dijon mustard
- 2 tablespoons fresh parsley
- 2 garlic cloves, crushed
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper
The chicken marinated for about 5 hours (from just after lunch to just before dinner time).
Then it baked in a cast iron skillet in the oven at 325 for an hour.
All done!
Unfortunately the lighting in my kitchen is TERRIBLE so I have no pretty shots of the roasted orange chicken breast. Boo.
However, the chicken was good. It was really moist and the citrus flavor wasn’t overpowering at all. The chicken had just a hint of orange sweetness to it that was complemented nicely by the addition of the parsley. Next time I’d try the chicken in the crock pot.
On the side I had faux fried green tomatoes and roasted broccoli.
A complete and delicious meal.

My favorite way is a big glass of it with some crackers or popcorn on the side. 🙂
My favorite way is just a good old glass of cold OJ with eggs, bacon and hash browns. However, I also make a good spread for crackers that’s a mix of OJ, cream cheese and craisins.
That spread sounds awesome!! I loved mocktails growing up! And OJ with Seven Up was always the best!!! Now I’d prefer a mimosa anyday!

I’ve never thought about adding OJ to savory foods before–looks delicious! I’ll have to give it a try. My favorite way to have it (besides mimosas, of course) is either straight in a glass as a refreshing beverage or in a smoothie to add a citrus kick!

I became obsessed with orange juice over the holidays when I started adding it to everything! Pancakes, cranberry sauce, baked goods…delicious
I like my O.J. over ice in a nice tall glass.
You mean besides drinking it straight up. Maybe straight out of the jug if noone is watching?
Subbing it for milk in my typical banana-milk-strawberries smoothie.
I like my orange juice served over ice in a nice tall glass.
A big tall glass is my personal fav. I want some now.
with champagne 🙂
I’m a Floridian and I grew up thinking that OJ cured colds. So when I’m sick, far from home, and wishing someone would take care of me I pour myself a big glass of OJ. In the winter my Dad even sends me a bushel of navels. Besides a glass of fresh squeezed my favorite is mixed with cranberries to make cranberry sauce.
When I have a sweet tooth, I’ll fill a glass with ice then pour equal parts OJ and vanilla soymilk and shake it for the perfect chilled creamsicle beverage!

Faux green tomatoes? Chicken sounds good, but I’d have to put it under broiler for a bit to brown it up.
OJ with popcorn is a particularly good combo
I’ve made dressings with orange juice and add it to any sauce that needs something sweet and acidic. But straight up in the morning, when I’m parched and or feeling like I am about to get sick, that’s when it becomes a necessity!

I think I have to go with mimosas. I love a good brunch complete with a delicious mimosa or two on the side.

I have two ways I love it (other than on its own)
1 – freeze the oj into cubes then use vanilla soy milk and blend into the yummiest smoothie ever (sometimes I add spinach and banana)
2 – and this one was born from necessity, I am vegan and we went to a b&b and the owner was horrified that I was eating cereal plain (and I seriously mixed everything that they had which was fiber one, Cheerios, and honey bunches of oats (I do honey) and so I poured oj over it and well YUM now I never use soy milk on cereal anymore

So many ways – straight up each morning, freshly made salad dressing, muffins/cakes, chicken and most definitely pork and nothing compares to fresh squeezed.
I love the extra pulp Florida orange juice by itself! Just like eating an orange!
I definitely enjoy the majority of my OJ in mimosas. 🙂

As a fellow Floridian from Clearwater, I also grew up on fresh oranges and tangerines from my backyard.
I have memories of us using it for chicken, duck, and even a lemon alternative for seafood!
Lately, my favorite way to enjoy is has been to just eat the fruit whole and save the peel for tea!
It saved me this flu & cold season. I just let the peels sit out for a day or 2 before I start using them. Green tea, orange peel & honey to taste. Try it!
Favorite way to use it is either mimosas or by the glass full when trying to get extra vitamin C when I feel run down !
Um, mimosas?! Hehe. I also like to use OJ just as you have done. There are so many WONDERFUL Asian-inspired dishes that I will throw a splash of OJ in or use it to marinate the meat ahead of time. It really breaks down the meat to make it juicy and flavorful. There’s nothing better than Florida OJ! Thanks for the chance to win!
