Kale and Eggs

by Meghann on September 18, 2012

Do you know what’s an awesome combination? Kale and eggs.

I like to saute the kale first with a little lemon juice, salt, and olive oil. Then I remove the kale and fry two eggs in the same pan to place on top.

I think the dish screams fall with the sauteed greens and just has a nice comfort feel to it.

On the side, I had a red pear and a whole wheat tortilla.

My Whole Foods has bulk bins for cookies now. I picked up a couple yesterday (impulse shopper –> right here) and had one of the chocolate-coated-raspberry-jammed filled ones for dessert. ‘Twas delicious.

Bare Dare 5k

Guess what’s coming to Tampa at the end of this month?

The Bare Dare 5k at Caliente Nudist Resort!

Yep, it’s another naked 5k. Get excited!

Did you know “naked 5k” is one of the top googled search terms to get to my blog? True story. I guess there are a lot of curious folks out there who want to know what it’s like to run a naked 5k. Or they’re just severely disappointed when they get to my site and discover there aren’t actually any nude photos. eh. What can you do?

The truth is I had a blast running Streak the Cove back in May and had such a great experience running nude, that I’m thinking about doing it again. Plus, this race is at the GORGEOUS Caliente Resort, which is essentially paradise in the middle of nowhere. Check out that pool!

What I wouldn’t give to be swimming there right now.

The race is at 8:30am on September 30th and registration is now open online HERE (with the $30 fee you get a t-shirt, post-run snacks, and all-day access to the resort following the race). If you’re nervous about running the race please read my race report and realize there’s nothing to be afraid of. There are runners of all shapes, sizes, and abilities and full nudity is NOT required.

Just don’t forget the sunscreen! ;)

I’ve never seen a red pear before — is it a Floridian fruit?
Also, I am keeping my ear to the ground but haven’t heard of any naked racing up here in Ottawa … maybe I’m not looking in the right places … haha. Kind of nervous to Google “naked running Ottawa”. But I think it would work wonders for self-esteem!!

We have red pears here in Ohio, too – Bartlett & Red Anjou are both red varieties…there may be others?

We definitely don’t have them in Ottawa (I checked around!) — they have them in BC (the other end of Canada), but we don’t even get them shipped in!
Feel like I’m missing out! :( haha. Not the worse scenario ever, but still.

I kind of wish we were a little more limited to local fruits, it’d make the exotic ones so much more exciting! Instead we have pumpkin year round and oranges flown in from south Africa :-(

Agreed, the only thing better is Kale, broccoli and eggs. I just saute the broccoli and kale together, but usually I roll the whole thing up in a tortilla when I’m done. SO GOOD.

I think I’d be more willing to do a naked race if I knew that absolutely no one I knew would be there… I have a feeling it would be a serious self-confidence boost though!

and the BodyGlide to reduce chaffing? ha!

I could never do that!!

I just had baked Kale sprinkled with crushed red peppers, some tomatoes and cucumbers and 2 poached eggs myself this morning…it was wonderful! ;-)

Yum, Kale! After all this nude 5k talk, I may have to add this to my fitness bucket list!

Well, that begs the question….will you be running another naked 5K?

I just went back to your Streak the Cove recap and say Cuatro’s comment down at the bottom. LMAO!

I don’t think I could EVER do a naked race. Eek!

I could never do a naked race – my girls need support!!

And running in the buff with a running bra on would kind of defeat the purpose:-)

I wish they offered races like that in Vancouver, BC… I feel like it would be a great experience, a good way to change the way you see yourself and help boost your confidence :)

Those are my favorite ways to make kale and eggs but I’ve never put them together in a pan. So easy, yet so genius. Thanks!

If I didn’t have post-baby boobs that were in places they shouldn’t be, I might consider doing one someday. Actually……no, I wouldn’t. I would LIKE to but I know I never could. However, I want YOU to do it for those of us who are too chicken. I think having that kind of confidence is amazing and something I hope I find someday!!

It seems funny that they are giving out a race t shirt ;) I wish I was brave enough to do it. You go girl!

You definitely should do it again! If I was a little braver… (and lived in a warmer climate!) ;)

Kale and eggs is a pretty fabulous combination. I was on a major food jag a few weeks ago when all I wanted to eat was kale with fried egg and sweet potato fries. Now I’m kind of craving it again after writing about it here…

I haven’t been reading your blog long enough…I’ll have to go back to read about your naked running experience. I could never do it. Too shy.

I participated in New York’s “No Pants Subway Ride” and had a blast! Who knew that being in your underwear in public with thousands of others could be so liberating. I can only imagine what you felt like! Way to be brave :)

I love your plates of food… they appeal to my need to have more than one type of food in my meal! I give you so much cred for the naked running! I keep thinking “ouch” on the lack of sports bra. LOL

I just want to know what you need a t-shirt for? Lol… shouldn’t this kind of race give out sunscreen, or maybe socks? :)

Eggs n kale looks good!

Whole foods selling cookies in bulk bins? Uh oh. I haven’t been to whole foods in awhile since it’s much more expensive than alternatives where I live (Trader Joe’s, etc.). But I think it’s time I make an appearance again in search of cookies!
