My Fruit Dealer (+ giveaway)

You know an email is going to be good when it starts with this subject line:

I like to joke with Lindsay at Whole Foods that she has become my fruit dealer of sorts. Two months ago it was a case of ataulfos mangoes, last month it was a set of pineapples, and just as I was jonsing for my next fix, my supplier came through offering up another bounty.

This month’s pick?  Whole Trade Guarantee mangos from Haiti.

The Whole Foods “Whole Trade Guarantee” means the mangos are from ethical trade, are grown in sound environmental practices and the farmers get more money back in their pockets, so everyone wins.

I have big plans for these bad boys. Starting with an idea I got from this pin the other weekend.

I followed the recipe for the corn cakes as directed.

The recipe was fairly simple to follow. The only thing I had to pick up from the store out of the ordinary were fresh ears of corn, but I’m sure frozen corn would have worked as well.

Check these babies out.

And went my own route for the salsa on top.

The secret ingredient? Mango. Of course.

In the mix was:

  • 1/2 yellow onion
  • 1 Whole Foods Mango
  • 1 tomato
  • 1 sweet pepper
  • 1 avocado
  • 1 can black beans
  • lemon juice
  • chili powder
  • cumin
  • salt and pepper

I let the juices soak together while I cooked the corn cakes, then scooped 2-3 heaping spoonfuls of the salsa over two corn cakes for my serving of dinner.

The corn cakes were slightly crunchy and dense, while the chilled salsa was sweet and refreshing over top. The two items balanced each other out perfectly. This was the ideal summer dish, especially in the Florida heat!

For dessert I had a serving of peanut butter ice cream from the freezer.

Fruit smoothies! We stock up on fruit at the farmer’s market during the summer and freeze it in order to enjoy smoothies all year round…although they’re never as good as they are in the summer!

My favorite summer themed fruit dish is actually pretty easy to make:

-fresh ripe mangos, cut into cubes
-watermelon with seeds taken out, cut into cubes
-cantaloupe, cut into cubes
-strawberries, with stems removed, slice
-squeeze lime juice over all the above
-sprinkle sea salt on all of the above
-use fruit chili (usually sold near the fruit or in the hispanic spices section) and sprinkle
-mix and let set for the flavors to develop & enjoy!

That salsa looks delicious! I love making salsas with pineapple or mango. If those mangos start getting over-ripe I would cut them in cubes, then throw them in the freezer, perfect for smoothies or margaritas!!

SALSA! I eat it by the spoonful during the summer. I’m actually allergic to mango skin, something I found out when I cut a mango then shoved my face in it to dig out the little bits that got stuck to the skin. An hour later, my face was broken out in hives and I had a fever. So, the husband is in charge of salsa making :)

YUMM!! I love mangos in the summertime! I’d have to say, my favorite fruit-inspired dish is probably a toss up between salmon with mango salsa (I probably eat this once a week in the summer!) or spinach and strawberry salads with goat cheese. YUM! It’s making me hungry as I type it!

I would have to say my favorite summer fruit dish is Dump Cake! It can be made into a healthy-fied verison but I love the classic with butter and yellow cake mix! The fruit gets dumped into the pan (I like blueberry pie filling and apple slices) and the cake mix and butter gets dumped on top. It comes out all hot and pairs perfectly with vanilla ice cream! MMMMMM!

I love blackberries and strawberries! I love going ot a local farm and picking both of htem fresh and eating them by the handful, in cobblers, with ice cream, or anyway!! Plus watermelon…can’t get enough watermelon.

My favorite fruity Summery dish is actually dessert. I had it a few years ago at a Thai restaurant and have been making it ever since. It’s Mango Sticky Rice and, oh my goodness, it is unbelievable. My favorite savory dish is probably something simple like grilled pineapple or watermelon/feta/arugula/walnut salads. I love this time of year!

My *new* favorite summertime fruit dish is definitely fresh mango and mango salsa. I always thought I hated mango until I re-introduced myself to it last summer. It is now my favorite fruit!! Like a tropical vacation everytime I eat it!!!!

I love to make fresh fruit salsa and pair it with cinnamon sugar tortilla chips that I make by sprinkling cinnamon sugar on tortillas sprayed with baking spray and cooking in the oven for a few minutes to crisp up and then cutting into triangles. Always a hit at summer BBQs!

No fair! My favorite summer fruit-themed dish is exactly what you showed here: a mango salsa! But other top likes include: green salad with fruit (like spinach salad with strawberry & feta, or a green salad with sliced apple & walnuts), fruit smoothies, fruity muffins, and I can’t forget the classics: SANGRIA and DESSERTS (key lime pie, strawberry jello pie, etc etc etc.)

Since I live in MN, most of the year I have to use frozen fruit for smoothies or other things like angel food cake, etc. So in the summer I just like ANY fresh fruit dish! Fruit salads, pies, etc! Anything where I can use fresh fruit instead of frozen!

Mango is my favorite fruit by far so it’s hard to choose but my craving right now is cottage cheese and a little stevia with fruit and a few chocolate chips. Can’t wait to try it with mango.
