Small Stack

Paaannnnncccaaakkkeeessss…. yum.

Sunday mornings = pancake mornings. :)

Need a pancake recipe recommendation? Check out Joy The Baker’s Oatmeal Cookie Pancake recipe. Trust me – it’s good. I divided the flour for half whole wheat/half all purpose and added walnuts to the mix. The results really did taste like a soft oatmeal cookie – moist, hearty, and delicious.

I topped my small stack of pancakes with PB2 ‘syrup’ and a very ripe mango for a very decadent morning treat.

They went far too quickly. Is it too early to dive into the leftovers? No? ;)

Derek and I have a little adventure planned for today. Let’s see if anyone can guess where we’re going.

  • There will be whipped cream.
  • We will need stretchy pants.
  • Celebrity sightings should include a little doughboy that giggles when you push his belly.

Any guesses? ;)

Stretchy Pants!! HA! That made me giggle this morning! :D The pancakes look good..sweet with that amazing mango but good. Id definitely need a slice of turkey sausage to balance it out. :)

That reminds me of Joey’s ‘Thanksgiving Pants’ from Friends! Sounds like a fun day planned ahead. I never thought to put mango on a pancake–what a great idea!

Great American Pie Festival! I was there today too and I’m pretty sure I saw you in the never ending pie buffet! I thought I saw someone that looked like you and then thought, no – why would she be all the way over here? Then I came on here and saw your post and I’m guessing it probably WAS you! LOL – hope you had fun! :)
