Kickboxing

by Meghann on February 29, 2012

Yes - kickboxing! :)

I sometimes forget my gym offers a wide variety of group exercise classes. My mind is so wrapped around running and strength training that everything else kind of fades in the background. I need to make a pact with myself to try something different once a week just to mix it up. I think I can handle that. Or maybe every other week. That works too. ;)

The kickboxing class was fun. I’m probably one of the least coordinated people on the planet, but all I had to do was take a quick look around the class at anytime and realize I am not alone. Uncoordinated people unite! I think that’s my favorite part about group exercise classes – you’re never alone when it comes to making a fool of yourself and, frankly, no one cares what you look like because they’re too busy getting their own exercise groove on.

Before the class I had my new favorite afternoon snack – mixed nuts with sommersaults.

Dinner tonight was conceived during my kickboxing class. Apparently kicking and punching makes me crave baked chicken tenders and roasted veggies.

The chicken tenders were dipped in an egg and milk wash then breaded in a whole wheat flour, cornmeal, and panko crumb mix. The tenders baked at 375 for 10 minutes, were flipped, and baked for another 5.

The brussels sprouts and potatoes roasted for 25 minutes at 375 with some salt, pepper, and 5 spice blend.

I think baked chicken tenders and roasted veggies rank up there as one of my favorite meals of all time. Right up there with pizza and hamburgers. The 10 year old me would be proud. ;)

I had a tiny piece of strawberry pie for dessert with a scoop of the Publix Tiramasu Ice Cream I picked up on Sunday and wanted to try.

The ice cream was good, but had more of a vanilla with chocolate fudge flavor than a distinct tiramasu flavor. It was definitely missing something.

Derek just put in Ides of March. Any bets on whether I’ll make it through the whole movie awake? The outlook is doubtful. ;)

Good Night!

Tutu Confession

by Meghann on February 29, 2012

This week has been a busy one.

I have two or three big projects I’ve been working on, plus the Healthy Living Summit stuff that has finally started to come together (I hope to have more details soon!). The last three mornings I’ve sat at my computer and worked straight from breakfast to lunch without moving an inch. When I looked to the right corner of my screen today and saw 1:15pm – I couldn’t believe it. Where does the time go?

Luckily I still had the griddle out from breakfast and could easily take advantage of it for heating up a quick lunch.

IMG_9819.JPG

I sliced an apple chicken sausage down the middle and opened it to lay flat on the griddle and cook. Next to the sausage, I heated up a serving of leftover quinoa from yesterday with some saurkraut. The quinoa and saurkraut heated up fairly quickly on the griddle and was served with the chicken sausage on top.

The whole combo was really good, but I’m convinced you can pair anything with quinoa and it will be amazing. That’s why I like starches, because they’re so versatile that you can match them with anything.

On the side I heated up a packet of frozen green beans because I felt my plate was missing a little green.

Official Photos

The official Princess Half Marathon photos were released today and the only thing I could do was laugh when I saw the hilariousness of them all.

I don’t know about you, but I think these babies are keepers. ;)

Don’t get me wrong, I had a blast running in my Belle costume on Sunday. It was fun to play dress-up (which is still one of my favorite games as an adult) and to wear a tiara, but I have a teeny tiny confession to make – I’m not a fan of any of my photos with the costume on.

Tutus are fun to wear and make, but – damn! – they are unflattering. They are just not made for short-torso-ed girls with any jiggle around the belly area. Not at all. Granted I saw some adorable girls who could really pull the tutus off, but it just was not working for me.

However, even knowing all of this, I would probably still wear a tutu (or Team Sparkle skirt!) if I were to run the race again next year. There’s something about the pure fun-ness of wearing a tutu that counterbalances the unflattering-ness of it. So I don’t like my photos. Big whoop. I have the special memories that mean so much more. :)

What are your thoughts on running in tutus? Yay or nay?

P.S. Check out the video they posted of Theodora and I passing the castle. You can see where we stopped to snap a couple of photos before taking off.

Good Morning! I decided to skip NROLFW this morning. Stage 7 has been rough in the sore-ness department and I just want to make sure I’m ready to go for Gasparilla on Sunday. Instead of NROLFW I took Maddie for a long walk around the neighborhood and completed YogaDownload.com’s Yoga for Runners (you can download more »

Sweet as Strawberry Pie

February 28, 2012

Do you know those kitchen tools that you just have to have, but as soon you bring them home you realize they’re only good for one or two things and essentially wind up in a junk drawer? Yeah, here’s one of mine. It’s a slicer I brought a couple of years ago because I thought more »

Run, Egg, Run

February 28, 2012

Last night I had this comment from Ashley on my blog Umm… she knows me too well because that was what was exactly on mind for lunch today. Only, instead of Mexican quinoa, it was an Asian version. I made a big pot of quinoa this morning (quinoa leftovers = awesome) and fixed a bowl more »
