Food On My Mind

by Meghann on November 30, 2011

Thank you for all the wonderful Vegas suggestions! Sounds like there are plenty of good places to eat and if we want to drink we should play the penny slots and tell the servers to keep them coming. Good to know. ;)

It turned cold this afternoon. Really cold. I just checked the forecast and it’s supposed to be cold in Vegas too. I LOVE it. Now it feels like Christmas. :)

I had a tangerine with a small handful of cashews for my afternoon snack.

Then escaped the cold weather by returning to Hot Fitness Yoga to try another one of their yoga classes. This one was just regular ole hot yoga and was a bit on the slow side. We moved through each pose very slowly and took the practice in a relaxing, meditative fashion. I didn’t hate the class, but I didn’t love it either.

They have a power class that I want to check out, but I’ll have to wait until it fits in my schedule.

To be honest, through most of the class I was thinking about what we had in the fridge and what we were going to make for dinner. I know, bad yogi! But I was hungry and food is always on my mind. :)

Turns out we had almost an entire pan of cornbread that dinner had to involve in some shape or form. We also had 1/2 a pound of ground chicken that needed to be cooked or tossed.

The cornbread became the base for an open-faced sandwich with the meat, a random can of tomatoes, and some onion that I cooked in a medium frying pan and topped with cheese, as the filling.

Have you ever had sauteed yellow squash with fresh dill? It’s amazing. Dill is my FAVORITE yellow squash seasoning, but I rarely have both on hand. I lucked out this evening and ate an entire yellow squash covered in dill all on my own.

Delicious. :)

A serving of pumpkin pie ice cream made an appearance for dessert.

Ahhh… Home Alone 2 is on TV right now. LOVE that movie! One of the few movies where the second one is almost better than the first. Almost. We’ll just pretend any Home Alone made after that doesn’t exist. ;)

Good Night!

Vegas Help

by Meghann on November 30, 2011

I made a rookie mistake in the world of cohabitation last night. I went to bed before calling dibs on the leftover potato leek soup and Derek polished it off as a midnight snack. It wasn’t until I went to grab it at lunch time that I even realized it was gone.

Rookie mistake. Big time.

Oh, well. On to Plan B.

IMG_2554.JPG

Plan B was random. My heart had already been set on the soup, so I wanted something warm and comforting to fill the void. I heated up the last of a bag of kale in a small frying pan and added some carrot, pinto beans, and a little seasoning.

IMG_2546.JPG

The results were perfect. The dish had a comforting southern vibe to it that was a perfect alternative to the hot soup.

On the side I melted a little cheese on some leftover cornbread.

IMG_2551.JPG

That was a first, but it definitely won’t be the last. I’m pretty sure melted cheese works well on almost anything.

Vegas Help

On Friday morning I’m packing up and heading out to Las Vegas to rock the half marathon with 30,000 of my closet friends.

las-vegas-rock-n-roll-half-marathon.jpg

Anne P. and I will be there representing Attune Foods and we can’t wait to get our race on!

We’re both extra excited because this will be first time we’ve returned to Vegas since being ‘of age.’ (The last time I was in Las Vegas I was 10 and don’t remember much outside of the cool arcades we were left to entertain ourselves in for hours.)

Now, here’s where we need your help. Vegas is SO big and SO overwhelming, that we’re not quite sure where to begin. What restaurants should we dine at?! What clubs should we dance in?! Where can I purchase a condom veil for Anne to rock through the weekend?!

Help! Please share all your Vegas tips and tricks with us!

Pumpkin Pancakes

November 30, 2011

Good Morning! I was all set to take my first spin class in months this morning when I checked the schedule online and realized my gym no longer provides the 6:30am spin option. Fail. So instead of spinning, I set up last night’s episode of Glee on the DVR and got my sweat on via more ยป
