Just Like Mom Used to Make

My mom hates to cook.

Ok, that’s a lie.

She just doesn’t prefer it.

My dad was always the cook in the family and my mom never stood in his way. More power to him – right, Mom? ;)

However, on the very rare occasion that my mom did pull my dad away from the kitchen, she had a few staple meals that she liked to make and she made them well. She was always the one to prep the lasagna, no holiday is complete without her famous cheeseball, and I’ll always remember the big pots of leek potato soup that always warmed my belly.

It’s been a couple of years since I’ve had leek soup, but when I saw a big bunch of leeks at the store this weekend, I knew I had to try and make a big pot just like mom used to make.

Only mine was a tad different. ;)

I started with a base of chopped leeks that I gently sauteed on medium heat for 10 minutes while being very careful to keep them from browning. (browned leeks = burnt leeks)

Then I added one regular potato and one sweet potato (my twist)

And covered it all with 2 cups of vegetable broth and 2 cups of 2% milk (another twist)

I brought everything to a boil, then back to a simmer for 30 minutes. When the potatoes were soft I blended it with my hand blender and seasoned with salt, pepper, and fresh parsley.

I topped my bowl with some cheese and fresh parsley.

The soup was creamy and filling. Each bite warmed my soul. Still not as great as what mom used to make, but I thought I came pretty close. :)

For the side, I baked an easy batch of cornbread using the recipe off of the bag of cornmeal. The results were very fluffy and almost cake like.

A piece of Dole Dark Chocolate found its way in my stomach for dessert.

My brother and his fiance brought the adorable pup home this afternoon. He’s a 10-lb 15wk old hypo-allergenic (they’re both allergic) miniature schnauzer. I haven’t even met him yet and I’m already in love. :)

And I know Maddie can’t wait to play with him either. ;)

That makes a total of 4 grandpuppies for my parents. Can you tell we’re dog people?!

Pacing Crutch
