I Need More Yoga in My Life

I’ve been slacking on yoga classes lately.

I think it’s a combination of not falling head-over-heels in love with any particular studio yet and the fact most studios are clear on the other side of town. Why, oh why, can’t I find a great studio within walking distance of my house. Would that be too much to ask? ๐Ÿ˜‰

I have found one studio that I do enjoy (though, it’s a decent drive away) and they just so happened to have a 5:45pm Power Yoga class that fit in my schedule. I spent the afternoon working in an adorable little French cafe in Hyde Park (drinking iced coffee and snacking on a nut/ dried fruit mix) then headed to Yogani for the class.

I may not be head-over-heels in love with Yogani, but the studio has grown on me. I appreciate the variety of classes, the instructors are always really helpful, and the studio is gorgeous. If only it was a little closer, I may be there more often.

Tonight’s Power Class was a reminder of why I need to attend more yoga classes. I love yoga, plain and simple; it’s hard to make my way to class, but once I’m there, I’m happy. I relax, I forget my day, and my body feels like jello afterwards. It’s love. ๐Ÿ™‚

After yoga I was at a bit of loss on what to do for dinner. Derek worked late tonight, so I was on my own and the only thing I wanted was a salad. Not sure what to put on my salad, I turned to the fridge (nothing stood out to me), then headed to the freezer where I had stocked up on frozen vegetable steam bags at Publix yesterday.

For some reason, those stood out to me. I popped a bag of ‘lightly sauced’ potatoes in the microwave, then a bag of brussels sprouts. While those were ‘steaming’ I seasoned a can of drained chickpeas with some chili powder and roasted them for 15 minutes at 415.

My salad then began to take shake – spinach, potatoes, brussels sprouts, chickpeas, parmesan cheese, and bbq sauce.

Oh, and a defrosted corn muffin.

I made a separate bowl for Derek as well and he gobbled it up. ๐Ÿ™‚ I’m usually not a fan of frozen vegetables (I swear they always taste like freezer burn!), but the steam-in-a-bag kind were great. And easy! Just pop them in the microwave and you’re good. It’s not an every day thing, but for a quick weeknight meal – they’re perfect!

After dinner an insane graving for homemade cookies hit. Not ‘healthified’ cookies filled with oats, flax, and nuts, but old fashion, melt in your mouth, homemade cookies like Dad used to make!

I consulted with one of my favorite recipe blogs (Smitten Kitten), found a simple, classic recipe for their Crisp Chewy Chocolate Chip Cookies, and proceeded to make a mess.

Only, I didn’t have chocolate chips.

I had M&Ms. ๐Ÿ™‚

The recipe suggested scooping 1/4 cup sized dough balls for ‘large’ cookies and 1 tablespoon for ‘small’ cookies.

Guess which one I picked?

It was so good it melted in my mouth. So chewy, so rich, and exactly what I was craving.
