Puppy Sitting

Meet Maggie.

Derek and I are dog-sitting his parent’s puppy tonight. It’s nice to have two dogs around to fight for you affection. I’ve never felt more loved!

(Side Note: Do you know how hard it is to get two dogs to sit for a photo? Very.)

The two pups were excellent help in the kitchen for dinner tonight. They paid extra attention as I pulled out all of my farmer’s market finds, just in case anything fell on the ground and they had to perform instant clean up duty.

No worries. Everything made it into the counter in one piece. Thanks for standing guard though girls! ๐Ÿ˜‰

I was oddly excited for dinner tonight because of this bad boy.

I usually purchase the generic, already cut, sealed in a bag kale from the grocery store, but something told me the fresh, organic kale would give the stuff I’m used to a run for kit’s money.

I was right. ๐Ÿ™‚

I sauteed the kale with tempeh, eggplant, dried apples, olive oil, balsamic vinegar, and a squirt of lemon. Seasoned with salt and pepper, tumeric, and fennel seeds. Topped with peanuts.

The dish was very fresh and flavorful. I could really tasted a difference in the fresh, untouched kale compared to my normal pre-prepped bagged stuff. Big. Big. Difference. ๐Ÿ™‚

The crusty whole wheat baguette served on the side was another Farmer Market find.

For dessert I had a Dark Chocolate Peanut Butter Cookie with some Moosetrack Ice Cream. Yum! ๐Ÿ™‚

I have an early wake up call in the morning for my long run of the weekend. I have a feeling 6:00am is going to come wayyyyy too soon!
