My sophomore year of college I moved into my very first apartment with my childhood friend Jordan.

We both came from the dorms and were very excited about the prospect of having our own bedrooms, our own closets, and our own bathrooms in the new digs.
We were also excited about finally having our own kitchen.

No more having to go one floor up or one floor down to use the community kitchen and no more mini fridge with a freezer that didn’t work.
The kitchen was a BIG deal to us, so naturally we celebrated our first night in the new place by collaborating on our first meal as roommates.

We followed Jordan’s Mom’s recipe for meatloaf, mashed potatoes, steamed green beans, and baked some frozen rolls in the oven.

I’ll never forget that meal because it was the meal I fell in love with meatloaf. It was my first experience making it on my own and after that I was hooked. Meatloaf was easy and always delicious.

I continued to specialize in meatloaf through college (even perfecting a ‘meatloaf for one’ recipe) and it’s still one of my favorite meals.
Except now a days it’s reserved for special occasions (like when the boyfriend spends the afternoon painting our living room).

Tonight’s meatloaf recipe was more of a ‘little of this’ and a ‘little of that’ feel than that first adventure, but is still loosely based off of Jordan’s Mom’s recipe we followed 6 years ago.
Meatloaf
- 1 lb Lean Ground Beef
- Chopped Onion
- Heaping handful of rolled oats
- Spoonful of ground flaxseed
- Worcestershire Sauce
- Big Squirt of Ketchup
- 1 Egg
- Rosemary
- S&P
- Garlic Salt
- Chili Power
Mix it all together, form a loaf, and bake at 350 for an hour.

Top with more ketchup.

See? Easy peasy. I’m pretty suer meatloaf is one of those things that is impossible to screw up. That’s why I like it.
On the side I steamed broccoli.

And roasted some red potato with rosemary ( LOVE potatoes and rosemary)

For dessert we had some Publix Moosetrack Frozen Yogurt.

Earlier this afternoon Derek and I popped a bag of Orville Redenbacher Popcorn.

They had sent me some samples in honor of their “Pop & Win” promotion. Apparently one in six bags is a winner. Not that bag though. Maybe next time.
