You’ll never believe what I have for you!
A new recipe! A real recipe! It has been far too long since I’ve shared anything new with your guys. Especially one that I can be proud of.

Cheesy Butternut Squash & Quinoa Casserole
- 1 medium Butternut Squash
- 1 cup cooked Quinoa
- 1/4 Red Onion
- 3 Garlic Cloves
- 1 Apple Chicken Sausage (optional)
- 1/2 cup Milk
- 1/2 cup Plain Yogurt
- 1 cup Shredded Cheese
- 1 T Rosemary
- 1 T Oregano
- 1 T Worcestershire Sauce
- Salt & Pepper
- Cinnamon
Preheat the oven to 375.
Peel, hollow, and cut the butternut squash into small bite size pieces. Sprinkle with cinnamon, salt, and pepper and bake at 375 for 15 minutes.
In a casserole dish combine all of the ingredients above + the cooked butternut squash. Cover with foil and bake for 25 minutes. Remove foil and bake 10 more minutes.

I served mine atop a bed of greens.

I love casseroles, I’m not sure why I don’t make them more often. They’re easy to throw together, you pretty much bake them and forget them, and they always make enough to live off of for days. Really, they’re a win-win all around.

Earlier this afternoon I snacked on a Kashi Bar.

For dessert – a Chocolate Vitatop (still BOGO at Publix until Sunday!!) with a scoop of Egg Nog ice cream.

When ever I order pizza at any restaurant my eyes are automatically drawn to the specialty pies on the menu.
Plain cheese? Boring! One topping? How could I ever pick just one? Build your own? What my combination isn’t a good one?
I love to see what creative combinations that restaurant is known for. Whether it be a mega veggie, a buffalo chicken, or something weird and exotic such as an egg topped pizza – I’m fair game to try anything.
Yesterday at Anthony’s Coal Fired Pizza was no different. The Eggplant Marino spoke to me from the specialty pies menu, so I decided to give it a shot.

Oh la la la
Extra thinly sliced eggplant. Lots of delicious tomato sauce. The world’s most perfect thin crust. I was in love.
So in love, that I claimed any left overs for myself and was salivating at the mouth dreaming of them as my lunch for today.
I reheated my two slices under the broiler then sprinkled the last of the fresh basil on top.
As is true with all left over pizza – it was better today. The eggplant flavor really showed through and I appreciated the thin slices. It reminded me of eggplant parmesan on pizza.
A true food photographer would have placed the side of snap peas on a separate plate to make it pretty. But, a real person just throws them on top to avoid an unnecessary dirty plate.
It’s a Girl!
Derek’s brother and his girlfriend are expecting their first child this summer and we just learned today that it’s a girl!!

Derek is going to have a niece!!! This is so exciting! I can’t wait to start buying up any pink I can get my hands on.
