Pie Fail

I learned a very important lesson today – Pie Is Hard. Especially Pecan Pie. Especially when I merely skim the recipe and leave out a very important ingredient such as eggs or something. Ooppsss…
Besides our one or two missteps my sister and I were baking superstars in the kitchen.

Our objectives:
- Homemade Pie Crust
- Pecan Pie
- Pumpkin Pie
- Pumpkin Bread
- Prep Green Bean Casserole
- Prep Vegetarian Stuffing
- Prep Pumpkin Cinnamon Rolls (for breakfast tomorrow)

Ready. Set. Go.

I’ve decided Cinnamon Rolls are my new specialty.

Can’t wait to pop these babies in the oven tomorrow morning.

Now, pecan pie is another story.
I don’t know why I selected such an ambitious pie as my first – I guess I didn’t know it was so ambitious at the time? All i know is pecan pie is my favorite, so why not start there? Before you have pie – you need crust. I followed this recipe from Brown Eyed Baker and ended up with a flaky, buttery crust.

The recipe was fairly simple and straight forward.
Basically you shred the butter

Mix it with flour, salt, and a little water

And you have crust.

So easy even I can do it.

I took everyone’s advice and decided to go with Pioneer Woman Cook’s Pecan Pie recipe. it’s hard to turn down a recipe that comes so highly recommended.

The recipe seemed simple enough (and probably would have been had I actually paid attention to the directions, but as I said above – 30 minutes into baking I realized I had forgotten to add the 3 eggs the recipe called for.

Luckily I had a second crust that I was saving for a pumpkin pie, but with no evaporated milk on hand for said pie I decided to try for pecan pie attempt #2.

About a quarter of the contents escaped the pan going into the oven, but we’ll just ignore that part.

I *think* this one came out, but we’ll have to wait and see until I cut into it tomorrow.

The non-egg version still tastes good (we were happily picking sugared pecans off the top), just a little sticky.

We took a break at lunch and I reheated some of last night’s pizza.

And Kelly made me a small salad of spinach, craisins, almond slivers, and a ginger dressing.

While I was making cinnamon rolls and pie, Kelly made a delicious loaf of Chocolate Chip Pumpkin Bread.

I had a piece hot out of the oven. It was delicious.

Kelly and were in the kitchen from 11:00am to 5:00pm. Once the final pie was out of the oven we packed up and headed to my parents house where we were greeted with pizza and salad.
After two meals in a row of pizza, I opted out for a plate of various left overs from my parents in fridge instead.

The star of my plate was a microwave baked potato topped with cheese and salsa. The combination was full of of flavor and really tasty.

On the side I had some left over chicken.

And random grapes.

Not ones to waste perfectly good sticky pie my family and I dug into the eggless pecan pie for dessert.

After sitting the rest of the afternoon, the pie was actually pretty firm and somewhat sliceable.

I had a tiny piece with vanilla ice cream. As I told Kelly, it was basically a pie of sugar filled with pecans. That means it was still good.

Sometimes failures are a good thing.
What a Loooong day.
Time to rest up for the big day of giving thanks tomorrow.
Good Night!
