Pumpkin Bowl

Dinner was good tonight.

Like really really good.

It all started with a pumpkin..

A pumpkin who was dying to be stuffed. ;)

The pumpkin was purchased with every intention of being stuffed in some way. I debated some sort of risotto or quiona, but then I remembered Emily’s Fall Farmer’s Market Feast. Her feast had caught my attention during the Foodbuzz Challenge and I knew her Black Bean Chili in a Pumpkin Bowl would be the perfect evening recipe.

I didn’t follow her chili recipe exactly. I was out of black beans (so, I used black eyed peas) and I was out of squash ( I left it out completely). I also added cinnamon. <– try it next time you make chilli, you’ll like it. ;)

Roasting the pumpkin (then cooking the chili in it! :) ) was a fun challenge. I assumed this would be a time consuming, labor intensive meal, but it wasn’t. Not at all. Emily’s directions were easy to follow and easy to understand. I was done cooking and ready to eat at 7:00. A big win in my eyes.

It was simple…

  • Cut the top off
  • De-Seed
  • Bake for 30 minutes
  • Fill with Chili
  • Bake 45 minutes more
  • Serve with a smile. :)

This would be the perfect meal for guests! Now I just need to have a dinner party to test it out on. Anyone interested?!? ;)

The best part was scraping the bowl with my spoon and getting bits of pumpkin in every bite. It was, in a word, amazing. :) Two thumbs way up!

You can’t have chili without cornbread. :)

While I was making Emily’s Chili in a Pumpkin Bowl, I decided to make a batch of her Jalapeno Cornbread Muffins as well. The recipe was simple and the results were fluffy and spicy.

Next time I would add just a touch of sugar though. They were missing a little sweetness. :)

This afternoon I tried a Raw-Way bar my friend Amanda had sent me the other week.

So, small world. Amanda is friends with Heather (who started Raw-Way with a friend) and Heather’s sister randomly reads the blog. Hi Heather’s Sister! But Heather didn’t know that when she gave the bar to Amanda. See? Small world! or if just seems small to me. ;)

Anyways, the bar was a little scary looking, but was actually quite tasty. I think it had large chunks of walnut in it that gave it a cookie taste. There were also big, plump raisins that gave the bites a touch of sweetness. :)

Time to relax in front of the tv.
