An Early Taste of Fall

Totally burnt the popcorn at work this afternoon

Yep, I was one of those people.

That’s what I get for popping an expired bag of popcorn that still looked deflated when it was done. FYI: a deflated bag is still a fully popped bag. Oh well.

I was mentally preparing my meals for the rest of the week when it dawned on me that this week only has one day left in it. I keep forgetting that today is Thursday and tomorrow is Friday. This short week has really flown by!

Tonight’s dinner was simple, delicious, and took advantage of the plethora of veggies I have in my fridge.

I roasted a parsnip, carrot, 1/2 a beet, mushrooms, and okra for 15 minutes at 420 degree in the oven with a little salt and pepper.

While those were roasting I had a pan of chickpeas doing the same thing in a pan right above them. Only the chickpeas had been coated with a little evoo, chili pepper, and salt.

I brought everything together with some north carolina bbq sauce, pumpkin seeds, and raisins.

I should have took a photo of everything all mixed up because that’s how I really ate it and enjoyed every bite. This meal reminded me of fall and had me really excited about it! :)

Dessert this evening came in the form of an Attune Chocolate Bar and a YumUniverse Fruit Leather from the HLS swag bag.

The fruit leather tasted just like a fruit roll-up. It was fruity, sticky and apparently can be easily made at home. I’ll have to follow the instructions on the packaging and check out YumUniverse.com to find out how. ;)

Daydreamer

I was dreaming of my lunch all morning.

The Apple, Brie, and Honey Pizza I made last night was easily one of the best things I have ever made and I had high hopes for the left overs of it waiting for me in the fridge.

The crust was still chewy, the toppings we still sweet, and each bite was just as delicious as I remembered. In fact, I would dare to say it was even better today because the flavors has a chance to mend and concentrate. I seriously can not wait to make this exact pizza again and again. :)

Or maybe tomorrow I’ll eat it in sandwich form? or in a wrap? or part of a salad? Oh the possibilities!

Grapes are one of those things that I eat a lot of that go unpictured, which is why I’ve gotten down to only purchasing them on the rarest occasions. Grapes are find in moderation, but eating a whole bag by myself over the course of 2 days may be overdoing it. ;)

Sorry Maddie, one day when it’s your own house then you can keep the house at what ever temp you would like.

Derek’s Run for MS

Just a reminder to please take a minute to donate to Derek’s fundraising efforts in the fight against MS. He’s running the Disney Wine & Dine Half in under a month and is still $200 short of goal!

Remember people, every dollar counts. :)

Also, I want to give a big SHOUT OUT to the wonderful Katie who had won Derek’s $50 Whole Food raffle, but opted to have the $50 go towards the fight for MS instead of towards Whole Foods. You are truly an amazing and beautiful person Katie!!!! 

A Lesson For Foodbuzz Featured Publishers

The other day I was tweeting about the Foodbuzz Featured Publisher Resource center and was surprised to discover how many of my fellow Foodbuzz Featured Publishers didn’t know the page existed.

Because of this I thought a little tutorial on the blog would be beneficial for at least a couple of my readers.

For those unfamiliar with the Featured Publisher Resource area on the Foodbuzz site, it’s where you can track your Foodbuzz impressions and revenue.

To access the center simply log on to Foodbuzz.com

From here you can see what your current CPM rate is, how much you are earning, and when to expect payment. Remember Foodbuzz has a 90 day pay cycle so what you made in July won’t actually be deposited in your Paypal account until October.
