The Big Bag

I’m not what one would call a ‘light packer.’

Had to break out the big bag for my 4 day trip out west.

Umm… yeah – I need help.

I guess I could have squeezed everything in the small suitcase, but then where would all the swag have gone? And trust me – there will be swag! πŸ˜‰

All I can say is thank goodness for Southwest and their free checked bag policy. That policy alone has made me a customer for life. Three cheers for Southwest!

There is ZERO food in my house and I was just too lazy to cook anything tonight. I debated stopping at a sub shop on the way home from errands this afternoon, but then i remembered these frozen Indian meals the Tandoor Chef team had sent me.

Out of the box and into the microwave it went!

I bulked the frozen meal up with some spinach, plain yogurt, and the last quarter of an avocado I had in the fridge.

The Chicken Tikka Masala was delicious! It was full of flavor and spice that paired perfectly with the cool and refreshing avocado and yogurt.

I’m actually excited to try the other frozen meals I have in the freezer. I’m not the biggest fan of frozen meals, but the indian dishes always tend to wine me over. Probably because no matter how much i try I can never exactly replicate that flavor at home. I think this is about as close as I am going to get without driving to an Indian restaurant and ordering straight from the menu. πŸ™‚

For dessert a serving of vanilla ice cream with granola and dark chocolate covered edamame.

Aw. Wish I were going. It also cracked me up that you called Chicago “out west”. I live in Charlotte, but am originally from Minnesota. I think of California as “west”. I guess I amuse easily!

I’m glad I’m not the only one that has a giant suitcase!!

LOL, I think I should give a class on packing lightly. I have a very small carry-on, and it lasted me on a five-day trip to New Orleans, and I was able to bring home plenty of souvenirs!

All the food looks great, but I’m mostly wanting that ice cream cone in the last pic …

Yes, I’m not a big fan of frozen meals either, but the ones from Tandoor Chef are the exception! I love the chicken masala the best…it seriously tastes like a restaurant version!

When you get back, try my chicken tikka masala – its so simple it can be made on a weeknight and the combination of flavors will have you making it at least once a week!

I feel the same way about microwave meals and I love Indian microwave dinners. A store just had some on sale a few weeks ago and so I bought some to try and they were all really good. Usually I just don’t buy microwave meals because they tend to be one big disappointment.
