Too Many Meetings

It feels so good to finally sit down and relax. Sure, I’ve got a lap top in my lap, but I’ll take blogging over meeting after meeting any day of the week.

My afternoon was filled with back to back meetings and my morning was spent preparing for those back to back meetings.

I took a break around 10:00 and had a snack of cherry tomatoes, mushrooms, and mozzarella cheese.

I also managed to sneak away from my desk for an early lunch before my crazy afternoon began.

I was sent this sample of Naan Pizza from the people at Tandoor Chef the other week.

Pizza on Naan? It sounds like a natural combination to me.

The ingredient list was pretty decent too. Everything looks pretty basic and no scary ingredients to be found.

When I originally pulled this out of the freezer I assumed it would be ready in the microwave in a few minutes. I was wrong.

Turns out an oven was required. ๐Ÿ™‚

Lunch took a little longer to prepare than originally expected, but it was worth it. The pizza came out of the oven with a perfect crispy crust.

The Naan Pizza comes in Margherita, Cilantro Pesto, Roasted Eggplant, and Spinach & Paneer Cheese.

Though the crust was crispy and delicious with a slight doughy center, the cilantro pesto flavor was lacking and a little bland. The crust impressed me, the flavor did not. I think next time I would try the Spinach & Paneer Cheese flavor – now that one sounds interesting. ๐Ÿ™‚

I served the whole pizza (which was actually a pretty tiny portion) for lunch with a side of leftover left over okra and carrot fries and bbq sauce.

After lunch I spent the remainder of the afternoon in the executive conference room where the marketing team tackled our initiatives for Q3 and Q4. My brian hurts.

Around 4:00 I started getting frigidity and was unable to concentrate – I struggle with sitting still for too long. Luckily we had a 5 minute break and I was able to grab my afternoon snack of cereal, dried fruit, and almonds.

After an afternoon of overloading my brain with information, I was more than ready for hot yoga this evening.

awww…. hot yoga, how you clear my mind while stretching my back. I think yoga should be a requirement any day I’m stuck in a tiny room for hours on end. It’s almost as good as a glass of wine after a long day of work. Almost.

I’m through with hot meals following yoga All I really want is a big bowl of ice cream, so that’s what I had – kind of.

Actually it’s a big bowl of smoothie, but it’s cold and refreshing and about as close as ice cream for dinner that I’m going to get. ๐Ÿ˜‰

I don’t know why I haven’t thought about having a cold smoothie post-hot yoga before, it really is the perfect meal after a hot, sweaty session on the mat.

For dessert, a piece of toast with Dark Chocolate Dreams Peanut Butter and Butterscotch Chips.

I’m not usually a fan of frozen pizzas, but I love the naan pizza idea. I can’t stand sitting still for too long either. When I worked in an office, I would take a 5 minute walk break once an hour or so.

Smoothies make a perfect meal!

I hate being stuck in a meeting all afternoon – sounds like yoga was the perfect remedy.

I have been having smoothies for dinner A LOT this summer. I am sometimes just so hot and tired and a smoothie or plain frozen fruit is all I want. Fruits, veggies, check and check!

I get so restless if I have to sit/stay in one place for too long. Sounds like yoga was an ideal way to unwind!

I just bought a Naan Pizza Crust and I’m planning to make pizza with it tonight. I love Naan and I love pizza so this combination just seems fitting to me as well.

I totally feel for you- my work week is kicking my behind. Great snack. I love fresh moz. Bummer about the pizza flavor- it looks awesome. Maybe some of the other flavors are better. Hope you have a wonderful Thursday Meghann ๐Ÿ™‚ And thank you for the anniversary wishes

Holy yum yum on that pizza!!! It looks sooo good. But then again, pizza on naan has to be good, right! ๐Ÿ™‚
