You know what I do when I can’t decide what to have for lunch?

I make a salad.

Salads are one of my favorite go-to foods; they can be transformed to fit what ever needs you have.

Craving veggies? Fill her up.

Lacking protein? add beans or almonds for a protein boost.

Need calcium? Pass the cheese please! Or switch out the typical lettuce for dark leafy greens instead. ๐Ÿ™‚

But just like any other food I grow tired of them if I have too many. Thatโ€™s why theyโ€™ve sort of become a special twice a week treat.

Today salad creation included:

  • Spinach
  • Arugula
  • Tomato
  • Cucumber
  • Tabouli
  • Hummus
  • Avocado
  • Almonds
  • Blue Cheese
  • Drizzle of Balsamic Vinegar

With a peach!

The peach was originally suppose to go on top of the salad, but it was too juicy not to be enjoyed on itโ€™s own. ๐Ÿ™‚

Salads are my favorite avenue for leftovers too. A base of arugula or lettuce is perfect for chili, eggs, etc.

I eat salads every day and I agree with you wholeheartedly–they can be whatever you want them to be! I add tofu, fat free cheese, beans, avocado, and tons of veggies to make them a complete meal. Love salads!

Salads are pretty great, but recently I realized that I like mine really really chopped; otherwise, I need a lot of dressing for it to taste good.

I love salads! I had one for dinner last night and one again for lunch today! Will probably have one for dinner tonight, too! I work at a cafe, so I can pretty much make any type of salad I want with whatever they have there. It’s awesome!

Salads are so versatile so that is always a good option when you don’t know what you want. Except for those days where you know you don’t want a salad. LOL

Those are my favorite kinds of salads! I combine whatever is left in the fridge – often things that “shouldn’t” go together at all – and I always find that the combination of flavors and textures is surprising and awesome!
