From Dressy to Comfy in 15 seconds or less

It’s the weekend! :)

That means I go from this….

And boy does it feel good. :)

Luckily Maddie doesn’t care what I look like.

I’ve been trying to find a middle name for Maddie. What do you think of Madeline Rose? It seems to roll right off the tongue when ever she’s in trouble.

Anyways…

Eggs were on the menu for dinner tonight. Eggs in sandwich form that is.

This was a tasty egg sandwich made with two eggs, onion, swiss cheese, salsa, and arugula.

When I was little my Dad used to make us egg sandwiches for breakfast before he took us to school. I miss that.

Okra Fries have returned! Woo hoo!!! :)

I think Okra Fries need their own recipe page – I seem to get the most e-mails on them. I’ll work on that next time I make them, but I promise it’s really easy. All you do is bake the okra whole at 400 for 20 minutes and then dip in ketchup. Easy peasy!

After dinner I decided to whip up a batch of Angela’s Healthy Carrot Cake Power Scuffins.

I had one fresh out of the oven with a serving of vanilla ice cream for dessert.

Hmm…. I really, really wanted to love the scuffin, but it was a bit tough. Too much baking powder maybe? I think I messed up. I always mess baking recipes up. Grrr….

Oh well. They’re still edible – I just wouldn’t give them to my neighbors or anything. ;)

I make a salad.

Salads are one of my favorite go-to foods; they can be transformed to fit what ever needs you have.

Craving veggies? Fill her up.

Lacking protein? add beans or almonds for a protein boost.

Need calcium? Pass the cheese please! Or switch out the typical lettuce for dark leafy greens instead. :)

But just like any other food I grow tired of them if I have too many. That’s why they’ve sort of become a special twice a week treat.

Today salad creation included:

  • Spinach
  • Arugula
  • Tomato
  • Cucumber
  • Tabouli
  • Hummus
  • Avocado
  • Almonds
  • Blue Cheese
  • Drizzle of Balsamic Vinegar

The peach was originally suppose to go on top of the salad, but it was too juicy not to be enjoyed on it’s own. :)
