As I am borrowing my Mom’s car for the week while mine is getting fixed, might as well take advantage of the convertible top, right?

Unfortunately, we discovered that riding with the top down in Florida in July with a heat index of 110 may not have been the smartest idea. There are no words for how hot, sweaty and sticky I was after 10 minutes with the top down.

Oh well, at least we had fun for a few minutes. ๐Ÿ™‚

Derek and I had several mission and errands to run today. We were on a mission to find me a phone of my dreams as well as picking up a few items items to complete some honey dos around the house. We left the apartment at 11:00am and didn’t return until close to 5:00. It was a long, long day, but totally worth it. I can’t tell you how long I’ve been putting off these tasks!

Instead of grabbing lunch on the fly, I thought ahead and packed us a picnic lunch to enjoy while we were away from the apartment.

I had to sweet talk a friend for this one from the technology conference I attended the other week. The intel wouldn’t give it to me at first because I didn’t have a scannable badge, but luckily I had a friend that did and was willing to hand it over after I begged and pleaded for it. ๐Ÿ™‚

I packed two salads and dressing containers for Derek and I with some frozen icees to keep it all cool.

Each salad contained:

  • Spinach
  • Tempeh
  • Blue Cheese
  • Tomato
  • Artichoke Hearts
  • Mushrooms

With a side of Honey Mustard dressing for for dipping.

I had 2 or 3 handfuls of Fritos for a good crunch to the meal.

The phone hunting was pretty easy.

I already knew exactly what I wanted (the HTC Evo) the only problem was finding the phone for the right price. In my humble opinion, Sprint is AWFUL with upgrades! They’re upgrade ‘discounts’ really aren’t much of a discount (which is why I currently have a hand me down phone from my little brother) and in order to get the phone I wanted, I needed to shell out $$$. ๐Ÿ™

I was apprehensive about spending so much money on a phone, but in the end I conceded and bought the phone I wanted. I’ve never had a cool phone before and I really, really wanted one. ๐Ÿ™‚ I’ll just have to disregard the fact that I paid double of what people are paying for the iPhone 4 right now.

Oh well. I guess we can’t win them all?

Since the Evo is such a hot item, no Sprint stores had it in stock! Best Buy was able to order it for me online and I should it expect it in 5 business days. I truly can not wait to play with my new toy. It will be so nice to have the ability to respond to e-mail on my phone! Or to have a twitter application for easy tweets! woo hoo!

A few more errands and a couple of hours later, we returned home with stomachs begging for big snacks. I prepared some sweet potato rounds in the microwave with a slather of almond butter melted on top.

The perfect snack. It tasted good and calmed my hunger. A win-win!

I was already planning on making my traditional pre-race pizza for dinner when my little brother called to invite Derek and I over to my sister’s for the exact same dinner. Why make pizza for two, when you can join in on pizza for 6?

Kelly and Anthony hosted Ben, Ashley, Derek and myself for homemade veggie pizzas. They prepped the dough, chopped the veggies, and baked the best pizza. Thanks guys!

Each pizza was topped with marinara sauce, mushrooms, spinach, olives, artichoke hearts, avocado, tempeh, sharp cheddar cheese and garlic.

I was a little skeptical about the avocado baked on the pizza, but it strangely worked. The baked avocado was actually really good, I don’t know why I was so afraid to heat it in the past?

I brought a few of last night’s cookie for dessert and enjoyed one with a serving of Kelly’s coffee ice cream.

Tomorrow is the big day! My first Olympic Triathlon!

The alarm is set for 4:30am (Derek is NOT happy about this), but that’s about it. I still need to gather all of my gear for the big day and it’s already after 10:00. Not good. Not good!

Wish Kelly and I luck! We’re going to kick that tri’s booty!

Life is Good

Happy Saturday everyone! The sun is shining, the birds are chirping, and I’m blogging from the comfort of my own couch with my man and puppy by my side – life is good. ๐Ÿ™‚ My Saturday started off with my long training run of the week; 13.1 miles in a little over 2 hours. Boo more ยป
