A forgotten favorite returned to the dinner table tonight.

Can you believe it has been over a month since I’ve made nut crusted fries? I know – me either! These were a weekly staple for a minute there.

I followed the usual directions and went with sweet potato as my fry base since it was really the only thing I had left in the kitchen.

Well, besides bok choy. Gotta love that bok choy.

The bok choy was sauteed in some olive oil with red pepper flakes, garlic, and rolled dates. The combination was sweet, spicy, and worked well as a side dish to the fries.

Maddie was after my dessert this evening.

My fridge is officially free of all fresh veggies and I’ve still got one day in my challenges to go. Luckily, there’s a mango hidden in the bottom drawer for breakfast tomorrow and the apple from lunch is still in my desk at work. I may be out of veggies, but I’ll be damned if they take my fresh fruit away from me.
Now, I just need to figure out what am I going to do without vegetables for lunch or dinner tomorrow? Hmmm…. I guess this is when creativity really comes into play? Or I guess this is where I actually start digging into my freezer and pantry for food? HA!
