I’m pretty sure it’s a general rule if your boss invites you out to lunch you have to accept, right?
At least that’s the thought that went through my head when the VP of marketing extended an invitation to join her for a bite to eat. I mean, who am I to turn down the VP? When she says jump – I say how high. 😉
Truth is I had this amazing lunch planned out in my head involving roasted figs and arugula that had me drooling most of the morning. Plus, I am a little burnt out on going out, but when she mentioned Mexican and the term ‘lunch meeting’ I couldn’t say no. I guess now I have an amazing dinner to look forward to. :)
We ended up at PR Tacos, which is a really great hole in the wall Mexican place down the street from our office.
I honestly can’t believe I’ve never been here before. The place was covered in signatures from thousands of customers over its 30 years in business and had a great hole in the wall charm to it that immediately made me think of my dad and how much he would love this place. Dad- next time you’re in town for lunch we’re heading here!
The food wasn’t bad either!
The table started with chips and salsa.
I’m not a big chip fan, but I had two hot chips with the medium salsa.
The menu was typical Mexican fare with a few twists thrown in. I was the most interested in the veggie options and how every menu item had the choice of containing chicken, beef, or veggies. When I asked the waitress what their veggies consisted of I was pleasantly surprised to hear the terms broccoli & cauliflower as opposed to the typical peppers and onions you find at more Mexican restaurants.
I ended up ordering the lunch combination with black beans & rice, veggie enchilada, and a veggie taco.
Everything was perfectly portioned and tasted fantastic. The veggies were right on target – plentiful and green. My one gripe was how cheese covered everything on the plate. Next time I would ask for no cheese on the enchilada or on the black beans. Besides that, I can’t wait to return.

I’ve gotten back into road cycling this summer. I enjoyed an amazing 37 mile ride on the Blue Ridge Parkway on Monday. Cycling up big mountains+beautiful North Carolina summer=the perfect summer workout!

I love biking in the summer to stay fit, it helps that my city is super hilly!

I’ve discovered Body Pump this summer. I’m in love with it.
I have started strength training 3-4 times a week. I can definitly see and feel results already! I don’t know how I went so long with just cardio workouts. I’m looking into trying body pump soon!
I’ve been exercising with friends to keep myself and others motivated!
I go running at 6 AM! I absolutely love it. I’ve added core work, push-ups, and strength training to improve my running, too.
I have incorporated nightly walks into my routine in addition to my daily gym encounters:-)
My husband is teaching me how to swim like a pro this summer! So far I’ve found it to be a great supplement to my running.
I just got back into running, and after reading this post, I might have to check out that BetterU Challenge– what a great program!
I have a leg injury so I’ve taken up swimming instead of my typical running.
I started walking in the metro park with my sister! We get a couple miles in, and lots of chatting, so it makes for a good post-work activity 🙂
Swimming is definitely the #1 way to stay active in the summer. Being by the beach or pool and playing volleyball or frisbee and then running into the water for a quick dip keeps the calories burning while you’re having fun.
I am currently training for a half marathon in September, so I’ve been running and taking boot camp classes. Heart diseases runs in both sides of my family so I try to make sure I stay active 🙂
Surfing! I used to be so intimidated watching people surf and had only tried it a handful of times but this summer I have been getting out there and loving it!

great veggie lunch! i have added speedwork to my running!
I live in washington and this is the first nice week of weather we’ve had, there is a trail by my house that I just started running yesterday for the first time, I usually walk it because it has many hills but it felt so good to run it im going to make it a nightly event five days a week, if u ever visit Washington u need to run chambers!!! It has gorgeous views of the puguet sound and it surrounds a Scottish-links style golf course!
I don’t think I’d turn down a free lunch either and you’ve found a nice little place to take your Dad now!

I’ve always hated running–just the thought of it made me want to gag! However, after I started reading your blog a few months ago, I became inspired to try it. I may not be fast, and I may not run far, but darn it, I love getting outside, smelling the fresh air, and movin’ my legs! I’d love to run some races one day–with enough training under me, of course. Go figure! 🙂
I love going to boxing class! It’s such a great workout for my arms, shoulders, core and even legs!
I’ve been doing Jillian Michael’s “Making the Cut” to incorporate some new strength training moves into my boring old routine. It’s a pretty tough workout and it keeps me on my toes!
I just purchased a “step” and cannot wait to do some step aerobics. It looks like total fun. I need to find a beginner DVD/VCR to teach me the steps.

Just this summer, I started doing yoga and it’s made a great difference in the tone and shape of my body. I am now a huge yoga fan! And, the added perk is the mind makeover it does too!
I rediscovered my love of swimming this summer! I avoided it for years because I wasn’t very fast (or very good at it) but now I’m obsessed! You don’t have to be good at something to enjoy it and get a great workout.

I usually run outdoors, but with my work schedule and the fact that it’s a billion degrees outside here in Texas, I’ve been trying out the local rock gym. It has over 30 different rock courses with various levels of difficulty. So much fun and a great workout!

This summer I found my love for swimming laps again!

I’ve really gotten back into running this summer after some time off due to a busy school schedule. I love starting my day with a run on the nearby trails!
I started a garden this year so instead of vegging out on the couch after dinner I’m outside puttering around, watering, and weeding my garden!
Well, I had a baby 3 weeks ago so now I’m getting back into running, which I had to stop doing when I was 28 weeks along.
I’ve been more diligent about strength training this summer. I always get my cardio in, but in the past the strength training was rare! Thanks for the giveaway and the info about heart disease. My grandmother died from the disease four years ago, so the cause is very important to me!
Running was my favorite activity of choice going into summer, but it’s been brutally hot lately and I am nursing a knee injury. Does consuming lots of banana soft serve count as a summer time activity??

this summer has been fun and healthy- my aunt and I went to a couple body pump classes, and we loved them , but they were too expensive and too far from where we live.
so, we asked around our extensive family tree and came up with some free weights and barbells, two steps and some wall mirrors. then we cleaned out her garage, and voila! garage body pump is a Saturday morning/Wednesday evening ritual that will be continued until I have to go to grad school in the fall.
I really want to try a spin class. It intimidates me a bit but everyone that I’ve talked to about it absolutely loves it!
I went Kayaking in Settle this past weekend and loved it so much I bought a kayak for back home in San Diego
I have taken up bike riding again! I havent gotten on a mountain bike since grade school. So fun!
I just moved into a new apartment with bike trails everywhere, so I’ve been biking again, and it’s wonderful!
I have started cycling on my road bike while the heat is on. I love to go out early in the morning and ride about 12 to 13 miles and then follow that up with a 1.5 to 2 mile run. I have found that this is helping me to keep my mileage up while it is too hot to run the long distances. Can’t wait to see who wins!

I’ve started riding my bike to and from the gym daily. I call it my warm up or cool down before my actual cardio.
Oddly enough, cleaning! Getting down and really scrubbing something is hard work!
I’ve never done any DVD workouts, besides trying the odd one here and there, but I’ve started doing Jillian’s Yoga Meltdown on days that I don’t go to the gym.
I like it for a quick 30 min. workout at home.
Since hurting my knee a few months ago I’ve picked up swimming!!
I’ve started a really tough weight lifting regiment to add to my running. Good thing about weights is that the 100 degree weather can’t interfere!
Asides yoga, I’ve started cycling and jumping ropes. Feel’s great 🙂 I just bought some weights and would begin weight training soon enough.
This summer I’ve started playing ultimate frisbee with my hubby and doing a weight-lifting class during my lunch hour at work! It’s been great to change it up!

I took my first spin class this summer. I am almost 6 feet tall so I thought that the bikes would be too small for me but I got the courage to ask the instructor before class to help me set it….and I LOVED IT!!! Totally hooked now 🙂

This summer I have been increasing my miles outside with running. I have been for the last year or so but have enjoyed running outside on the trail behind my condo.
I’ve gotten into going to the gym on a more regular basis, its nice to exercise in the AC and not get as hot outdoors!

I’ve started doing the Cathe STS Mesocycle workouts – lifting heavier weights than in the past. It is really fun and I’m seeing results – plus it is a nice change from the pounding and high intesnity cardio of running.

now that school’s out for the summer, i’ve been out dancing with my friends! a couple hours of dancing to 80s hits or the oldies works up a sweat and is a great night out with friends!
This summer I have committed to spending more time chasing my son. I usually let him do all the running around and I watch from a comfy spot in the shade. But, why should he get to have all the fun? So, I’m running after him; and having a great time creating a summer’s worth of memories.

I moved to a more walkable neighborhood!
I was frustrated where I lived for the past year: an apartment complex on a dangerous, hilly, dark, wooded street with no shoulders, frequent traffic, and no street lights. I love to run, walk, bike… anything that doesn’t require a car! I needed to move.
Now I live in a neighborhood that is more urban, which means it’s more walkable: sidewalks, streetlights, things to do and see that are within a mile or two (though most things are actually much closer than that!). Less driving = more walking/biking/running = a healthier me!
I recently took up running a couple of months ago! It’s sooo challenging but I love it. I like that you see improvements really quickly – I am training for an 8K race next month – eeek!
I’ve tried to start running (until I sprained my ankle). Hopefully I’ll be able to get back to it soon 🙂

Me and Jillian Michaels dvd’s have become great friends over the summer! I have never been a dvd kind of girl, but my husbands work schedule prevents me from getting to the gym with three kids. Well. Since I hurt my back 3 months ago, I can’t really do my weight lifting anymore. So I’ve started running and biking. I plan on starting to learn to swim in the fall to train for a triathlon.
I’ve started to take my dog on long walks once a week (used to only do short ones throughout the day)…we explore new trails and routes through the neighborhood. I feel better knowing she is getting a good amount of exercise once a week 🙂
I’ve recently begun to alternate my days with zumba (so much fun!), spinning classes (hard, but worth it!), and training for a 10k by following Hal Higdon’s running plan! I am honestly feeling the best I ever have, which is saying a lot since I have asthma!

I have been quite the avid doggy paddler and recently have put an effort into learning how to be a better swimmer. This is also sparked by an interest in doing my first tri… altho, having no bike or the finances to purchase one right now makes that part difficult… thankfully, beaches and lakes are free for me to splash around in!

I’ve taken up swimming this summer! I recently lost a lot of weight so this is the first summer I feel somewhat comfortable in a bathing suit at a public pool!
This summer I started taking Kardio Kickbox classes. I love that adrenaline rush!
I’m training for two half marathons (both this fall), and am about to start Jillian Michaels 30 day shred!!!
I’m a swimmer, through and through.
I have been walking my dog after the sun goes down-usually we walk him everyday anyways but in this heat it is easy to want to skip it. So we have been making it a habit to go late at night!
Lots and lots of speed training and love it! Its way too hot to do long distance right now and is definitely going to help when I start my marathon training in a few weeks!
I love water exercises this summer! Maybe going to Hawaii and the good workout I got in the ocean helped, but I’m loving me some time in the pool.
I’m starting to do yoga sessions in my office during the lunch hour. It helps me with the rest of my day and gives a nice activity even though it’s hot outside.
Little known tidbit: the health of your gums is related to your cardiovascular health so make sure to floss daily to help maintain healthy gums.
I’ve been sticking with the gym! That’s new for me! It has been really nice with how hot it has been in PA lately!
Aw, my favorite part of Mexican food is that its smothered in cheese! What can I say. I love my dairy. ;]
This is going to sound weird since most people hate them but strength training DVDs! I’m in love with how strong they make me feel!!
We’re trying to get out and hike more. We had no idea how many great places are within an hour drive of our house!
I’ve started to stretch a lot more recently, and I’ve noticed an increase in my flexibility. Yay!

I have taken up running this summer! It is such a fun challenge to increase my pace and distance.
I’ve decided to start walking to and from campus during my summer sessions! Fresh air and the light cardio will keep me awake during my classes.
I have taken to more outdoor walking and hiking! I love living in the mountains-summers are awesome!

this summer i started taking beginner hatha yoga classes at my gym! it was nerve-racking at first since i am soooo unflexible but i am loving it now
I’ve decided to take my biking up a notch and am training for the MS 150. I’m a little over 60 days away and am so nervous! I actually have a pretty big fear of riding my bike. I pushed myself through training for a couple triathlons and now I’m really facing my fears. I love it!
I’ve always been really into running but after a marathon I completed in October a running injury has kept me from doing all of the things I loved doing in the summer – running, hiking, biking, and horseback riding.
Because of this I got into yoga and more strength training. I still crave running but I like to think that practicing yoga and more strength training will help prevent more injuries once I’m running again.
I have taken up biking and walking during my lunch break at work.
I have recently started to swim at our local YMCA and I love it!! California is great for all types of activities 🙂
I just bought a roadbike last weekend to help supplement my intense running schedule. I’m in looooooooooooove. 😀
Hi,
I have fallen in love with Zumba this summer 😀 I love the way that people of all ages and all walks of life come and enjoy the classes. I’m considering becoming an instructor and hope to be able to have classes in the workplace so more people can become active 🙂 I would love to be able to use the jump rope and stretch band to exercise at home!
i’ve actually started doing interval runs this summer. it definitely feels like the time goes by faster! i also like doing something fun outside like hiking, or playing soccer on the beach.
Running including a run across the Golden Gate while vacationing in San Fran that was motivated by this blog.
