Staying In

by Meghann on July 1, 2010

I was [this close] to having dinner with my Dad, sister, and Anthony tonight.

They were all heading to a hole in the wall italian restaurant that had peaked my Dad’s interest when he drove by it earlier today and anytime my Dad states a place peaked his interest you know its gonna be good. ๐Ÿ˜‰

I got in my car, plugged the address into my gps and realized I just wasn’t in the mood to eat out again. I have been eating out all week and knew I would be eating out again all weekend. I just couldn’t do it tonight – my one chance to stay in.

Plus, my tastebuds were elsewhere. All day I had my heart set on a sweet potato and can of black beans that were waiting for me at home. My taste buds were craving the combo and no matter how good that italian restaurant was I knew I would never be satisfied if my heart was set somewhere else.

I’ll see my family tomorrow night and I know I will get to try that restaurant eventually, but tonight it felt good to just stay home and enjoy my sweet potato and beans.

The sweet potato was chopped and microwaved for a couple of minutes, then topped with black beans and heated a little longer. I topped the winning combination with some plantains I had heated up on the stove top and a generous scoop of salsa.

I’m all for listening to my body and tonight my body told me to stay home and relax. You have no idea how happy I am that I listened. ๐Ÿ˜‰

Dessert was a serving of vanilla ice cream with fresh blueberries and dark chocolate edamame.

I snacked on some cherries earlier this afternoon.

A special guest just arrived! ๐Ÿ˜‰

Someone was lucky enough to have tomorrow has a corporate holiday and came up a day early to taunt me with his freedom. Pshhh… how rude. I suppose I should put him to work to make up for it? My floors could use a good cleanin. ๐Ÿ˜‰

Sweet potatoes and black beans are ever-so much more tasty than any restaurant meal, anyways. ๐Ÿ˜€ Enjoy your night in!

Oooh, fresh fruit (blueberries especially) alongside ice cream? I haven’t done that in forever! I’ve been eating so much fruit during the mornings, and while I’m TEMPTED to eat it now, I’ll wait until tomorrow night!

I know what you mean about eating out often. It’s always nice when it’s a once-in-a-while thing, but once you do it a few times in a row, or multiple times a week, sometimes you just want to cook up your own food combos at home.

I wish that I always followed my instincts. They always seem to be right!

I know what you mean. And you definately deserve some downtime! You’ve been go-go-going forever. If you wanna sit at home and eat potatoes and beans, you should!
