I <3 my Daddy!

Happy Father’s Day the the Best Daddy in the Whole Wide World!

I know there is some stiff competition out there, but my Dad seriously has that title in the bag.

My Dad is my number one supporter in everything I do, my favorite cook ever, one great adventurer, and has managed to raise four pretty spatactular kids if I do say so myself. If that doesn’t scream father of the century than I’m not sure what does. 😉

My day started with a bit of a panic this morning. I went to put on my running shoes and realized I had left them in a locker at the gym on Friday morning. Ooppss…

Instead of completely freaking out – which, I have been known to do – I put on an older pair of running shoes and ran the planned 6 miles anyway. The 6 miles allowed me to clear my head and I concluded that even if my shoes were lost forever it wouldn’t be a bad thing. I mean, I am due for a new pair anyways. 😉

Thankfully, my running shoes were still in the exact same locker I had left them in on Friday morning. I swung by my gym on my way to my parents this morning and found them just where I left them. Crisis averted. Thank goodness. I still need a new pair before training begins next week though!

After my run I made Sunday waffles for my visiting guests.

I’m not sure what the proper protocol is with breakfast when your houseguest are still sleeping, but it got to be 9:00am and I was hungry, so I just went in the kitchen and started making them. They didn’t seem to mind when they were awaken by the smells of fresh homemade waffles just a few feet from where they were sleeping. 😉

I had a waffle (from a box mix) with plain yogurt, an assortment of fresh berries, and sprinkle of granola.

Then it was off to my parents house!

The waffles weren’t filling at all. I had a granola bar almost as soon as i arrived at my parent’s.

My parent’s arrived home from their glacier adventure late last night and had the whole gang over for a low key Father’s Day celebration.

We made my Dad homemade pizzas and salad.

The salad had spinach, arugula, avocado, mango, cucumber, cherry tomatoes , and feta. It was pretty amazing. 🙂

I had 1/2 of a small veggie pizza on a multigrain crust with salad and balsamic dressing.

The Magic Hat #9 was on sale at Publix. It was pretty tasty for a pale ale. 🙂

For dessert we brought out a yellow watermelon.

It was just a tad sweeter than regular watermelon, but still just as juicy and delicious.

I was admittedly lazy this afternoon by napping and relaxing at my parents before heading home. It felt good to do nothing. Sometimes a girl just needs a lazy afternoon with her family. 🙂

My brother had left some great looking left overs in my fridge from last night. Since he was already halfway on his way to Miami I figured he didn’t have any use for them and decided to bulk them up for my dinner tonight.

The left overs consisted of some meat ka-bobs, hummus, rice, and pita. I stir fried the meat and rice with some veggies and topped the creation with the hummus and pita.

I really love turning random left overs into fabulous meals. I hate to see good food go to waste! 😉

I tamed my sweet tooth with some sweet cherries and a mini chocolate bar for dessert.

Another weekend is now behind me. Time to prepare for what I know will be a week from hell. I better get the last bit of rest that I can before it all sets in tomorrow morning.
