Kayaks

Our mission to kayak was a success today!

Since there wasn’t enough kayaks for the whole family to kayak the other day we had to split it up. Yesterday my Dad, Josh, Kelly, and Anthony took the kayaks out. And today my Dad, Derek and myself took them for a spin.

We took the boats out for about an hour and a half. Which was more than enough time to get a nice arm work out in. Derek and I were DONE at the end. :)

When we made it back to the house I dug into a Clif Kids Twisted Fruit.

They were handing these out at my race last weekend. I really enjoyed it as a sweet treat. It reminded me of a twizzler only fruitier and juicier. :)

The pool was needed after the morning in the sun.

A beer was needed too.

It’s amazing how many beers 7 people go through in the course of an hour.

I had been planning my lunch since breakfast time. I knew exactly what I wanted and I couldn’t wait to created what I had been envisioning in my head all morning.

I started with an ‘eggs in a basket’ (or pita in this case) and topped it with avocado, cheese, and salsa in order to create an eggs in a basket pita of sorts.

It was DELICIOUS! If possible it was even better than I had imagined it would be. The eggs in a basket really made the perfect base for the spanish themed toppings. I would made this again in a heart beat!

On the side I had a handful of pretzels

For dessert I had the last half of a cupcake.

Now it’s time to enjoy my last afternoon on this island. This vacation has flown by way too quickly!
