Island Life

Our original plan to take the kayaks out this morning was a fail.

There weren’t enough kayaks for the 7 of us to enjoy. Booo…

Good thing we had a back up plan!

Let’s just say our bikes were in less than perfect condition. I bet if you were left to deteriorate in the sand, humidity and salt water you would be in less than perfect condition too. ๐Ÿ™‚

Our bike ride took us on a 45 minute tour of the island. By the end all we could think about was the cool, refreshing water of the pool.

Yes, we put the tent into the pool. We were after the shade. ๐Ÿ˜‰

Besides we were having too much fun playing with the underwater camera to care. ๐Ÿ™‚

Anthony learned a very important lesson today – do not take a self portrait on Meghann’s camera and not expect it to end up on the blog. hehe

When it came time for lunch I decided to serve my family one of my new favorite treats – nut crusted parsnip and carrot fries. Yum!

Everyone loved them! Even my Mom – who is scared of everything new – tried a couple and enjoyed them. You seriously can not go wrong with these fries!

I had a slice of Great Harvest Bread with a piece of cheese and a tiny piece of tofu on the side.

It was a pretty tiring morning.

Apparently I was caught taking a nap with Maddie, but hey what are vacations for?

You’ll never guess what we found in the kitchen.

A juicer! You have no idea how badly I want a juicer.

I couldn’t wait to create a juice of apple, beets, and carrot.

However, I was a little disappointed that it didn’t make much at all. Still delicious though. One day I will have a juicer. One day…

Kelly and I partook in an impromtu yoga session on the beach. ๐Ÿ™‚

Burgers and Chicken sausages were on the menu for dinner tonight. I wasn’t really feeling a traditional burger or chicken sausage so I improvised with a salad.

My meals are about to get really interesting and a little out of character after this one.

Trying to purchase enough fresh food for 7 people for 7 days is tough. My parents did a great job stocking up on enough meat to feed an army, but it’s only Tuesday and our fresh vegetable stash is running really low. There is no real grocery store on this island and heading to the mainland is not an option at the moment. So, you may be seeing a little more meat than normal and not as much green. ๐Ÿ™

Oh well.

At least we still have wine.

Run, Sweat, Run

Running on this island is hard work! I ran 3.2 miles in just under 30 minutes this morning. And trust me those 3 miles were hard work! They were all in sand and despite running before 7:00am I was drenched in sweat as soon as I walked out the door! I don’t see myself going more ยป
