Today was a good day. :)

How can a day not be good when you start it off with a triathlon? I need to begin starting all my days with races – I forget how addicting they are! I’m already eager for another one. ;)

After I finished my post this morning I met my cousin Debby (have I mentioned I have a zillion cousins?!?!) at Infusion Tea for lunch and some business talk.

Debby is looking to start a ‘how to’ blog on homemade beauty products and I happily shared everything I know about blogs with her.

Debby is celebrating her third wedding anniversary next weekend and I swear it feels like yesterday I was watching her get married on the beach.

Fun fact: Debby is exactly 2 years older than me! We have the exact same birthday only she was born on February 8, 1983 and I was born on February 8, 1985!

I wasn’t planning on eating at Infusion Tea, but time got away from me and before I knew it, it was 1:50 and I was suppose to meet Debby at 2:00. Yikes! I felt out the door and ordered a quick bite to eat when I arrived.

Of course, I wasn’t really complaining. I’m not sure I could ever complain about eating at Infusion Tea. ;)

I had the 1/2 and 1/2 combo which included half of the Milton Salad (greens, tomato, beets, cucumber, craisins, tabouli, humus, & balsamic reduction)

And 1/2 an Almond Butter, Honey, Granola, and Strawberries sandwich.

I ran into my old AP english teacher at Infusion Tea who (whom? Some AP english student I was!) I haven’t seen since high school graduation 7 years ago!

I don’t know about you, but every time I run into an old teacher I immediately want to start listing off all of my accomplishments since I’ve seen them last. It’s as if that constant need to impress teachers never seems to disappear. Somehow in our 3 minute conversation I managed to work in graduating from FSU, my full time job, my morning triathlon, that my twin bro was finishing up his third year in med school, and how my sis just finished her first year at grad school (they were also her students). I hope I made her proud. :)

For dinner tonight I put my thinking cap on and got a little creative.

Ricotta Cous Cous with Shrimp

  • 2/3 cup dried cous cous
  • 2/3 cup boiling water
  • 12 shrimp
  • 1/4 cup chopped leeks
  • 1/2 cup mushrooms
  • 1/2 cup cherry tomatoes (halved)
  • 2 handfuls of spinach
  • 1/4 cup part skim ricotta cheese
  • oregano
  • fresh basil
  • s&p

Start by combining the dried cous cous with the boiling water and set aside for 5 minutes.

Add the leeks, tomato, mushrooms, tomatoes, and oregano to a hot pan and sautee until veggies are soft. Add the spinach and shrimp and cook until shrimp are pink.

Move the pan to a lower heat setting. Add the cous cous and ricotta cheese and season to taste with salt and pepper.

I topped my portion with raisins.

And had a small salad of arugula, artichoke hearts, and raspberry vinaigrette on the side.

The addition of the ricotta to the cous cous made the dish very creamy and delicious. I was a little nervous how the ricotta flavor would blend with everything else, but it was perfect.

For dessert I had a serving of vanilla ice cream with TJ’s mini pb cups, dark chocolate edamame, and cacao nibs.

Tomorrow is a brand new day! :)

Your cousin is my age and celebrating her 3rd wedding anniversary. Sigh for me! Infusion Tea food always looks so yummy!

Wow looks like you had quite the day! Ricotta cheese is amazing. I just had pizza with ricotta (and 4 other cheeses) and it was out of this world – but the ricotta was my favorite part!

Wow, great ricotta shrimp dish! Love the addition of raisins!
I know what you mean about feeling like you have to ‘prove’ yourself to old teachers/friends you run in to… I’ve definitely felt that way too!

Your infusuion tea lunch looks great! I’m sure your cousin really appreciated your guidance and I’ll be interested to see a link to come in your posting for her site! When I read your sandwhich order, I was like, omg yum! Seriously though Almond butter, strawberry, honey and granola?! That is SO a “Meghann” sandwhich!!!! Haha :D

Whom is correct in that sentence! You are describing the object of your sentence. Who is used for the subject of a sentence or clause, and whom is always used for an object.
I was an English major and I love grammar. I just might have to become a teacher at some point. :)

I’m only at my second year in the uni, but I feel the same way, when I meet someone from my high school, whether it is a teacher or a student, I feel I need to brag a bit. It’s not like I accomplished much, but I feel proud and I want to share that :D

What an incredible sounding sandwich!! The US are so much more adventerous with their sandwich fillings!
I love seeing teachers now I’ve finished school – I feel more like they’re ‘real people’ kind of thing :)
