Pre-Triathlon Chow Down

Want to know what my favorite pre-race meal is?

Pizza!

Specifically homemade pizza using Publix pizza dough that can be found in the bakery section.

Derek and I split the dough in half and made two large pizzas – one for me and one for him. :)

We had a plethora of toppings to choose from.

My toppings

  • Mushrooms
  • Artichoke Hearts
  • Chickpeas
  • Leeks
  • Beets
  • Feta
  • Mozzarella
  • Basil

15 minutes later it was pizza time!

I had 1/2 of my pizza with the rest of the brussel sprouts from last night’s dinner.

For dessert I had a serving of coffee ice cream with a Oatmeal Chocolate Chunk Cookie.

Tomorrow I am racing in my SECOND sprint triathlon! Eekk!!!

Can you believe it was over a year ago that I was competing in my first?

I’ll never forget that race. It was the week after my sister’s accident and I swam, biked, and ran in her honor.

It was one of the most exciting races I’ve ever competed in thanks to the extra support and transitions.

I actually can’t believe I let so much time go between tris – I hope to not let that be the case again. :)

Last year my official finish time was 1:36:44.146 This year I am aiming for around 1:30:00. I feel much more prepared this time around and really feel like I can kick some serious booty tomorrow morning. Let’s hope all that training paid off!

Your homemade pziza looks so great! I am craving some of that now. I wish I had Publix so I could get that dough. GOOD LUCK tomorrow!!

Did you notice how you felt after having that type of meal the night before race day? I have only done one triathlon and had pasta the night before but I didn’t sleep very well. Your pizza looked awesome and I just wanted to know if you thought it was a good idea to eat like that pre race day. Thanks
