Get Your Tickets!

by Meghann on May 19, 2010

Healthy Living Summit 2010 tickets are now for sale!!

Head to for details!!! ๐Ÿ™‚

Didn’t get one?!? You still have a chance for a freebie! I’m hosting a giveaway on Monday. Stay tuned!!

After work I had the pleasure of introducing my sister, Kelly, to hot yoga.

(Sara is in the photo too! Hi Sara!)

Kelly liked it! In fact, she signed up for the same 40 for 40 deal that I got! Just one more sister bonding experience for the two of us. I love my sister. ๐Ÿ™‚

Tonight’s practice was very slow and focused on holding positions for strength. I was very shaky at the end of class – a good sign. With each class I really find myself getting deeper and deeper into the practice. I’m making adjustments as I flow and can feel the benefits from each position. I’m becoming quite the yogi. ๐Ÿ˜‰

Before class I had a strawberry oikos with granola.

I was a little nervous having dairy so close to a hot yoga practice ( dairy is usually a no-no for me before runs and work outs), but my stomach was fine. ๐Ÿ™‚

After class I took my time preparing a great post-yoga meal.

I steamed some yucca with onions and topped it with the tiniest piece of butter.

And paired that with left over sweet potato

Black Beans

and Avocado.

Mmm.. gotta love Cuban food.

For dessert I had the last of a dark chocolate bar with some strawberries.

TIme to catch up on Glee! Good Night!

I see you had some yucca for dinner ๐Ÿ˜€ I’ve always been scared to try it, as I’m not really sure what it pairs well with, or how to cook it? Do you have any other suggestions for it besides sauteing? Thanks!

Yucca is usually paired with black beans in cuban meals. I love to team it with onions for about 15 minutes I also love to make yucca fries where I cut the yucca into fry shapes and bake at 400 for 15 to 20 mins.

I am STILL yet to find hot yoga in this town ๐Ÿ™

Dinner looked good! I am just wondering about your sweet potato. It looks like it still has the skin on, do you just scrub them really well? And how do they taste with the skin left on?

10 Meghann May 20, 2010 at 8:38 am

I LOVE the sweet potato skin! That’s where all the fiber and good stuff is! Yes, I clean it really well and I actually enjoy the fact that it’s chewy. I rarely peel a potato anymore ๐Ÿ™‚

I don’t know why I never tried granola with Oikos, looks good!

12 clairedille May 20, 2010 at 2:32 am

Sounds like a good time with your sis and you really have me craving some hot yoga, it’s been too long! The cuban spin off sounds tasty, and green and black chocolate of course!

13 britchickruns May 20, 2010 at 3:05 am

Oooh good dinner!
Gah, I’m so sad I missed out on tickets to the HLS ๐Ÿ™ stupid British clock … ๐Ÿ™

I have a problem with dairy too and it will go either way for me. Also your meal looked delicious. I am huge fan of dark chocolate and fresh strawberries. If I dont eat a chocolate bar I will sub sf dark chocolate pudding and mix in fresh strawberries.

15 Sarah May 20, 2010 at 8:13 am

Mmmm…I love ALL the components of your post-yoga dinner, so I think I “need” to copy it- very soon!

16 Sarah (from See Sarah Eat) May 20, 2010 at 8:25 am

Chocolate and strawberries are the best combination! Looking forward to your giveaway on Monday ๐Ÿ™‚

17 Jul May 20, 2010 at 10:12 am

Oh, interesting! What other foods are off-limits for you before hard workouts?

I’ve been drooling over all your yucca creations. I’ve seen yucca at the supermarket, but I’d have no idea how to begin peeling? chopping? How about a yucca tutorial? ๐Ÿ™‚

NPH and Matt Morrison was the best part of this weeks glee!

19 runningwithsass May 20, 2010 at 10:41 am

all the food looks great!

20 Annie May 20, 2010 at 11:24 am

I heart cuban food in a big way. My family (both sides) is from Florida. Whenever we are together, we make black beans and rice. Swoons.

Also, Glee was amazing this week!
