After work I had the pleasure of introducing my sister, Kelly, to hot yoga.

Kelly liked it! In fact, she signed up for the same 40 for 40 deal that I got! Just one more sister bonding experience for the two of us. I love my sister. :)

Tonight’s practice was very slow and focused on holding positions for strength. I was very shaky at the end of class – a good sign. With each class I really find myself getting deeper and deeper into the practice. I’m making adjustments as I flow and can feel the benefits from each position. I’m becoming quite the yogi. ;)

Before class I had a strawberry oikos with granola.

I was a little nervous having dairy so close to a hot yoga practice ( dairy is usually a no-no for me before runs and work outs), but my stomach was fine. :)

After class I took my time preparing a great post-yoga meal.

I steamed some yucca with onions and topped it with the tiniest piece of butter.

And paired that with left over sweet potato

For dessert I had the last of a dark chocolate bar with some strawberries.

I see you had some yucca for dinner :D I’ve always been scared to try it, as I’m not really sure what it pairs well with, or how to cook it? Do you have any other suggestions for it besides sauteing? Thanks!

Yucca is usually paired with black beans in cuban meals. I love to team it with onions for about 15 minutes I also love to make yucca fries where I cut the yucca into fry shapes and bake at 400 for 15 to 20 mins.

Dinner looked good! I am just wondering about your sweet potato. It looks like it still has the skin on, do you just scrub them really well? And how do they taste with the skin left on?

I LOVE the sweet potato skin! That’s where all the fiber and good stuff is! Yes, I clean it really well and I actually enjoy the fact that it’s chewy. I rarely peel a potato anymore :)

I have a problem with dairy too and it will go either way for me. Also your meal looked delicious. I am huge fan of dark chocolate and fresh strawberries. If I dont eat a chocolate bar I will sub sf dark chocolate pudding and mix in fresh strawberries.

Oh, interesting! What other foods are off-limits for you before hard workouts?

I’ve been drooling over all your yucca creations. I’ve seen yucca at the supermarket, but I’d have no idea how to begin peeling? chopping? How about a yucca tutorial? :-)

I heart cuban food in a big way. My family (both sides) is from Florida. Whenever we are together, we make black beans and rice. Swoons.

Also, Glee was amazing this week!
