The Return of an Old Favorite

Here’s a great lunch combination I haven’t had in a while.

Sweet Potato & Black Beans! Yum!

Sweet Potatoes & Black Beans are one of those combos I never would have thought of before I started reading blogs, but it is seriously one of my favorites! I spruced the combination up today by adding some left over harvest blend from last night, spinach, and a little salsa.

I ate some raw green beans on the side for a cool and refreshing crunch.

I love having the ability to go home and make hot meals like this one. There is something so warm and comforting about having a hot meal for lunch. It warms up my insides and makes me believe the rest of the day is going to be ok. 🙂

Nuts are a great comfort food too.

Specifically mixed nuts with chocolate goldfish. 😉

I have a HOT date with HOT yoga tonight! I can’t wait to get my sweat on. 🙂

A sweet potatoe with black beans is my favorite combo ever. It gets even better if you add hummus! yummm.

I just had a sweet potato with black beans yesterday for lunch and its definitely one of my all time favorites. Yum!

Ive never tried that combo. But I do LOVE Baked beans and sweet potato

I’m having sweet potato’s for lunch too. They are my favorite food, hands down (well except for anything having to do with dessert)!

Sweet potatoes and black beans are awesome together. I usually eat those in a wrap the night before I race and it hasn’t failed me yet! 🙂

I had a hot yoga date tonight too. Hope your’s was wonderful.
I love that your lunch was just as random and tasty as most of my meals…people I work/live with are always surprised that the combinations taste as good as they do, but my personal philosophy is that the more veggies, grains and other accoutrements you put in a bowl, the better!
