Eating What I Crave

I only had one thing on my mind for dinner tonight: Nut Butter Crusted Parsnip & Carrot Fries.

I’ve made these before and have been CRAVING them ever since.

There is no word for how good these babies are and they are so simple to make. Just mix some olive oil & peanut butter (I’m out of almond butter ๐Ÿ™ ) then coat the carrots and parsnips before baking at 400 for 30 minutes. (original recipe found here)

Of course, dinner would not be complete with out a little green.

I wanted chocolate for dessert. I had a little mix of dark chocolate edamame, mini pb cups, chocolate power berries, and cheerios.

I’m not sure where today went. All of a sudden it’s 9:30? What’s up with that?!?!

The weekend was a blur and now it’s time to prepare for the start of another week!

I have those nights a lot where I only want to eat certain random combinations of foods. You just have to satisfy those cravings.

Dinners like that are the BEST! I’m reading “The Things We Eat When We’re Alone” and it’s full of interesting meals. Pretty amusing book!

Wow those fries look great, I will definitely have to try that recipe!
My friend bought me some dark chocolate edaname beans for my birthday, I have yet to break into ’em.. but, yum!

I made parsnip fries yesterday as well! They are SOOO good. The only problem was, I ate the entire batch before my family got home to have any. Oops!! I can’t control myself around the yumminess (I had roasted about 4 x 5 inch parsnips!)

Those look really good but I can’t even begin to imagine what they would taste like. Do they taste like nut butter?
