Eating What I Crave

I only had one thing on my mind for dinner tonight: Nut Butter Crusted Parsnip & Carrot Fries.

I’ve made these before and have been CRAVING them ever since.

There is no word for how good these babies are and they are so simple to make. Just mix some olive oil & peanut butter (I’m out of almond butter :( ) then coat the carrots and parsnips before baking at 400 for 30 minutes. (original recipe found here)

Of course, dinner would not be complete with out a little green.

I wanted chocolate for dessert. I had a little mix of dark chocolate edamame, mini pb cups, chocolate power berries, and cheerios.

I’m not sure where today went. All of a sudden it’s 9:30? What’s up with that?!?!

The weekend was a blur and now it’s time to prepare for the start of another week!

I am my Mother's Daughter

Beautiful weather. Gorgeous beach. Packed sand. You know where I was this morning… That’s right – a breath taking run on the beach. Would you expect anything less? My alarm went off at 7:00 am this morning (woo hoo to sleeping in!) and in less than 5 minutes my running shoes were laced up and more ยป
