Why am I watching the NFL draft tonight?
Well, obviously it’s because I am a HUGE sports fanatic and care which team gets which pick. π
Or, you know, it could be because this guy traveled all the way from Tampa and I gave him complete control of the TV.
Hi Derek!
Truth be told I didn’t even completely understand what the draft was before tonight. Now, after 2+ hours of watching, I think I’ve got it down. π
In honor of the NFL Draft – and Derek’s visit π – I whipped up one fabulous meal for dinner tonight.
The star of the plate was the homemade baked falafel balls.
I followed Sabrina’s recipe for Baked Falafel and found it very easy to follow thanks to the fun ‘how-to’ video on the recipe page. Sabrina – when you’re a famous FoodNetwork Star don’t forget your blogging buddies. π
I used Sabrina’s recipe for the falafels, but my own for the tzatziki sauce.
- 1/2 cup Greek Yogurt
- 1/4 Cucumber
- 1 Tbs Oregano
- 1 Tsp Cumin
- 1 clove Garlic
- Salt
- Pepper
Place all into a food processor and let it go.
Add to falafels + tomato + spinach + cucumber + flat out
I think Derek approved. π
The flavors of the falafel were perfect. It had just the right amount of garlic punch without being too overpowering. The sauce was cooling, messy, and exactly what the pita needed. Delicious. π
On the side I baked a mix of carrot and parsnip fries.
After dinner we took a break from watching the draft to get Jeremiah’s.
I’m a cake batter freak! It’s my favorite ice cream flavor hands down. As soon as I saw the sign for the gelati version, I knew exactly I was getting.
1/2 cake batter italian ice, 1/2 soft serve swirl
If you live in Orlando I would highly suggest checking this seasonal flavor out! It was rich, but very good. I would happily order it again and again and again. π
At work this afternoon I snacked on an orange.
With a chocolate nut square.
If you’ll excuse me someone just got picked that means nothing to me, but apparently means the world to Derek. off to do the happy dance with him. π
