Just Chillin'

Awww…. re-lax-ation. ๐Ÿ™‚

Now tell me – what is better than a Friday night all to yourself filled with puppy love and a full DVR? Absolutely nothing! ๐Ÿ˜‰

It has been a crazy week and I’m happy to report it’s finally over. Woo hoo!

This afternoon I snacked on some trail mix while I finished up at work.

I had a vision of Taco Chili Fries in my head for dinner. ๐Ÿ™‚

My original vision has yuca fries, a taco chili topping, and cheese.

Only I was too lazy to cut the yuca base into actual fry shapes. Instead I had yuca cubes that were baked at 415 for 15 minutes.

That taco chili I had envisioned? Yeah, it was more of tempeh with taco seasoning and kale that I had heated up on the stove top. I still tasted great when topped with cheese.

With some lightly roasted asparagus for color.

I was really wishing I had some blue corn chips to chow down with. I think that’s all that was missing. ๐Ÿ™‚

Dessert was a serving of Thin Mint Ice Cream with two Thin Mint cookies

Tomorrow morning I’m heading to Miami to visit my twin bro and a very good bloggie friend. My plans include eating good food, soaking up the sun, and an adventurous bike ride. I can’t wait!

I am home relaxing and watching my DVR this fine Friday too, and I wouldn’t have it any other way. Ohhhh the Girl Scout flavored ice cream. I have not given in cause I’m pretty sure I’d eat the entire half gallon in one sitting! Have fun in Miami!

I had a really quiet Friday night and loved it! Saw “Date Night” with my mom (haha) and then just read on the couch for a few hours. Low-key nights are key once in a while. ๐Ÿ˜€

How are you feeling post ultramarathon? Your recovery is seriously superhuman — I can’t believe you haven’t spent the last week inert, complaining about soreness!

Well the ultra was two weeks ago now and Istill feel great. I think it was the face that I kept moving during recover, but still not pushing too hard.

oh my gahh-that dinner! that looks GREAT! you are so creative. i loved how you put cinnamon in your dinner the other night too!! I did that yesterday to my salad and my roomates were like “THAT IS SO GROSS” and i was like.. no .. you dont understand!

Sounds like a relaxing friday night. I have a couple questions about Maggie; m(cutest dog ever) shes a jack russel, right? Does she require a lot of exercise? I’m thinking about getting one but I want to make sure it would be comfortable living in an apartment. What’s your daily routine with maggie?

Yes, Maddie is a jack russell. She is my second jack russell and I think is the perfect aprtment dog. Sure she goes crazy and runs in circles, but after 10 mnutes she’s tired adn needs a 5 hour nap.

Thank you for introducing me to yucca! I never knew what to do with it until I kept reading about it on your blog and finally picked some up at the grocery store. I don’t know how I lived so long without it – yucca fries are delicious! thanks ๐Ÿ™‚
