Breakfast Skillet

If you were to ask me what my favorite meal to eat out is I would have to say breakfast. I don’t know what it is, but my heart just yearns for all breakfast item. Eggs, crepes, waffles, pancakes… I heart them all!

Usually the waffles and pancakes are what catch my attention on every breakfast menu, but every once in a while I tempt myself with the ‘skillet’ portion of the menu and began to drool. The ‘skillets’ typically consist of a home fries base that is topped with an egg scramble and paired with meat and toast. Yummy!

Today I thought it would be fun to recreate one of those fabulous breakfast skillets for dinner tonight.

I started with a base of homemade sweet potato & kale home fries.

Sweet Potato & Kale Home Fries

  • 1/2 Sweet Potato
  • 3 generous handfuls of kale
  • 1 tablespoon Garlic
  • Pinch Red Pepper Flakes
  • Pinch Oregano
  • Mushrooms
  • 1/2 small yellow onion

Start with a hot skillet that has been sprayed with oil, add the sweet potato that has been cut into small cubes, and once potatoes have a nice color (about 5 minutes) add the seasonings, mushrooms, and onion. Cook for 10 minutes on medium heat and add the kale just a few minutes before serving.

To top the home fries I made a two egg scramble with artichoke & sundried tomatoes.

This may not have been as greasy or rich as a traditional breakfast skillet, but it was still just as amazing to me. :)

For dessert I dug into my dark chocolate easter bunny and strawberries.

My afternoon snack consisted of 1/2 a cup of Maddie Wishes this was her Cereal and 1/2 cup of Cheerios.

Confession: I have a tooth ache. :( (it’s my back molar)

Another Confession: I haven’t been to the dentist in almost two years.

A Final Confession: The dentist scares me.

Something tells me I need to get over that last one. I am hoping in making this very public announcement that you all will encourage me to make a dentist appointment tomorrow morning. I’ve been putting this off too long!

Extra Charges

My breakfast must have been the perfect mix of fiber, fats, carbs, and protein because it kept me full all morning. It’s very rare that I don’t need a mid-morning snack, so I will count that combo as a true winner in my book.

I guess you could also attribute the extra fullness due to the fact I ate my breakfast an hour later than normal. Hmmm…. I guess the world will never know. ;)

Lunch today was a simple platter plate of munchies.

Right smack in the middle were nice globs of hummus and taboulli for dipping.

I love the array of colors on my plate. I always associate a colorful meal as a nutrient rich meal.

Hotel Charges…

In this economy it seems every company is out there to nickel and dime us. Airlines charge us for carry-ons, cell companies charge for text messages, and paying for internet seems to be expected in most locations. I’m not happy with any of these extra charges, but have slowly grown accustomed to them.

For the conference this weekend I had been warning my clients the additional charges for internet and parking at the hotel, but one that never occurred to me (and one I was shocked to discover) was the charge for the fitness center!

That’s right, my hotel charges each guest $10 for use of their fitness facilities! Is this a common thing? because it’s new to me.

The charge is automatically added to the account when the hotel guest uses their key to enter the fitness center. I guess there was a sign above the key entry, but I only vaguely remember it.

Luckily, the fitness center was included in the suite accommodations I had through the hotel – as well as a free continental breakfast I never visited – so I was not aware of the charge until my return when the expense reports began rolling in.

Charging $10 a day to use an on-property fitness center is a little crazy to me. I mean the center was nice, but it wasn’t that nice. And I feel bad because the added charge would only discourage people from working out while traveling. Not cool hotel not cool!

What are your thoughts on hotels charging for use of the fitness center?
